Caramel Layers

Cookie # 18 is:

Caramel Layers









1 cup flour plus 2 tablespoons flour
¼ teaspoon baking soda
¼ teaspoon salt
½ cup firmly packed brown sugar
¾ cup quick oats
½ cup butter
24 caramels
2 tablespoons cream
½ cup chocolate chips

Preheat oven to 350 degrees

In a mixing bowl, combine 1 cup flour, salt, soda, brown sugar and oats. Cut in butter until mixture is fine. Reserve 1 cup and press remaining mixture into the bottom of a greased 8” square pan. Bake for 10 minutes. Melt caramels with cream in a microwave safe bowl until cream is hot. Stir until caramels are smooth. Blend in 2 tablespoons flour. Spread carefully over base. Sprinkle with chocolate chips then reserved crumb mixture. Bake for 12 – 15 minutes until lightly browned. Cool cut into bars.

Makes 12 – 15 bars.
