Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Hoagie Casserole

This turned out to be a very fun surprise! I was cruising around the internet trying to get some inspiration when I ran across a recipe that used salami. I had just been given some homemade salami from a friend who makes his own every year at Christmastime. And to top it off, the recipe used Crescent rolls...which I am totally addicted to right now. I'm not a fan of Swiss cheese so I changed that in my recipe to Gouda...which turned out fan-TAS-tic! Anyway...this casserole is very good and something that's different! It tastes just like a sandwich!! It could also be used as an appetizer....just cut it into smaller squares! How fun is THAT?
  
Hoagie Casserole

2 11-ounce cans buttery Crescent Rolls
1 16-ounce jar roasted red peppers – drained
6 – 8 pieces of ham (lunch meat)
1 8-ounce package pepperoni slices
1 8-ounce package salami
6 – 8 slices of Provolone cheese
6 – 8 slices Swiss cheese
3 tablespoons grated parmesan cheese
3 eggs
Preheat oven to 350 degrees. Spray a 9x13 inch casserole dish with cooking spray.
Open one can of the rolls and place on the bottom of the pan. Seal seams.
Layer ham, Provolone cheese, red peppers, salami, Swiss cheese and pepperoni.
In a small bowl, beat eggs with the parmesan cheese. Pour half over the layered mixture.
Top with remaining Crescent rolls. Seal seams. Pour remaining egg mixture on top then brush to coat the rolls.
Bake for 45 minutes. Allow to set for about 5 minutes then cut into squares to serve.
Serves 6 - 8
