Have you ever been to the Melting Pot? That fondue place? I've
never been but have always wanted to. Whoever thought to dip food in
melted cheese was a genius! I decided to make this for dinner for IT Guy
and I and it was perfect! There are so many choices of dippers but I
used french bread, steamed broccoli and some kielbasa. Yummers! I think
some little meatballs would be fun....cherry tomatoes....the options are
endless!!!
Cheese Fondue
2 grated cups cheddar cheese
2 grated cups gruyere cheese
1 garlic clove ~ sliced in half
3 tablespoons flour
2 tablespoons butter
1 1/2 cups whole milk
1 1/2 teaspoons lemon juice
a few dashes of nutmeg
salt & pepper to taste
Rub a large sauce pan with the sliced garlic.
In a large bowl, toss cheeses with 1 tablespoon of the flour.
Melt the butter in the sauce pan over medium heat. Add the rest of the flour. Stir well until smooth.
Add
1/2 cup of milk and continue to stir until smooth. Add the remaining
milk, stirring constantly until the mixture thickens to about the
consistency of light cream.
Add a handful of the cheese mixture
and continue to stir, allowing the cheese melt. Add another handful and
stir until melted. Continue until all the cheese is added and melted.
Once the cheese is smooth stir in the nutmeg, salt and pepper
Add the lemon juice, stirring more until the mixture is smooth.
Warm your fondue pot or crock pot and add the cheese mixture.
Serve immediately with your favorite dippers.
