Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Maple Bacon Squares

Is it a dessert? Is it an appetizer? A meal? I’m not sure but it’s all the things it should be. As IT Guy put it, “it’s the most glorious thing I’ve ever eaten’. Okay...so I’m not sure that’s entirely true but it IS pretty stinkin’ delicious. And I’m not even a big maple person, except on pancakes. But I do love a maple/bacon combo. One of my goals is to go to VooDoo Donuts in Portland, Oregon to make myself sick on a couple of those bad boys. Someday. Anyway, in the meantime, you should try this fun little treat....and see if you don’t agree about how yummy it is.


Maple Bacon Squares
 
1 tube of refrigerated Grands Crescent Rolls
1/2 cup maple syrup
3/4 cup brown sugar
1 pound bacon ~ diced
 
Preheat oven to 325 degrees. Line a 10x15 inch cookie sheet with foil then spray with cooking spray....REEEEEALYYYYY WELL. (You’ll be sorry if your don’t.)
 
In a medium skillet, cook the bacon until it’s almost done. You still want a little pink on it. It will continue to cook in the oven.
 
Press the crescent roll dough to fit the pan.
 
Drizzle half of the maple syrup onto the dough.
 
Sprinkle with 1/4 cup of the brown sugar.
 
Scatter partially cooked bacon on top.
 
Drizzle remaining maple syrup on top of bacon then sprinkle remaining 1/2 cup of brown sugar on top.
 
Bake for 25 - 30 minutes until caramelized.
 
Allow to cool then cut into squares.
 
Store in a covered container. Reheat in the oven.

Okay...let's get to gettin'!

Press the dough into your pan onto WELL GREASED foil, then poke all over with a fork.

Spread 1/2 of the maple syrup onto the dough then spread with the back of a spoon.

Then sprinkle with 1/4 
cup of the brown sugar.

Then add the partially cooked bacon. See how it's still pink? This is what you want because it will continue to cook in the oven.

Scatter the bacon on top.

Then drizzle with remaining maple syrup and sprinkle with the rest of the brown sugar.

Bake until caramelized and 
the dough is golden brown.
Allow to cool then cut into squares.

Berry Squares

Sometimes pie filling can be your best friend. Like with these berry squares. So yummy! Mix up the ingredients for the crust, throw the pie filling on top and you've got yourself an easy dessert! You can certainly half the recipe for something smaller or make the whole thing and freeze some for later. I used raspberry, but switch it up to whatever floats your boat! A really easy and tasty treat!


Berry Squares



1 cup butter ~ softened
2 cups sugar
1 teaspoon salt
4 eggs
1 teaspoon vanilla
3 cups flour
2 21-ounce cans berry pie filling (I used raspberry)

Preheat oven to 350 degrees. Spray a 15x10x1 inch baking pan with cooking spray.
In a large mixing bowl, cream butter, sugar and salt until fluffy.

Add eggs, one at a time until combined.

Add vanilla.

Add flour, a little at a time.

Spread 3 cups of the batter into the prepared pan.

Gently spread pie filling over batter.

Dot mixture with remaining batter.

Bake 45 minutes or so until lightly browned. Cool.

Drizzle with powdered sugar glaze (recipe follows)

1 cup powdered sugar
1 teaspoon vanilla
2-3 tablespoons milk

In a small bowl combine powdered sugar and vanilla and enough milk to reach drizzling consistency. 


Cut into bars. About 4 dozen.
