Mini Peach Cobblers

Cobblers
1 stick butter ~ cut into 12 pieces
1 cup sugar
1 cup flour
1 teaspoon baking powder
1/2 cup milk
dash salt
1 - 2 cups frozen peach slices
Preheat oven to 350 degrees. Spray a 12 cup cupcake tin really well with cooking spray. Or line the cups with paper liners, sprayed with cooking spray.
Place 1 piece of butter into each of the cups in the cupcake tin.
In a medium bowl, combine the flour, sugar, baking powder, milk and salt. Stir well.
Divide batter between the cups.
Dice peaches and divide between the cups. I used 1 - 1 1/2 slices per cup.
Allow to cool then use a spoon to remove.
Topping
1/4 cup butter ~ softened
1/4 cup brown sugar
1/4 oats
1/2 teaspoon cinnamon
Combine all ingredients in a small bowl. Divide mixture between the 12 cups and spoon on top of peaches.
Bake for 30 minutes until batter is light golden brown.
Serve with a scoop of ice cream.

Mix the flour, sugar, baking powder
and milk in a bowl and stir well.

Place a pat of butter in the bottom
of each muffin cup. Do this if you're
using liners, as well.

Divide the batter amongst the cups.

Mix it up...

..then sprinkle it on top of the
diced peaches on the batter.

Bake! My batter over-ran a little bit.
I just used a knife to push it back
into the cup. No big deal.

Serve with ice cream!
