Another recipe from my mom’s
binder! Every now and then I like to go through it and find recipes.
There’s always something I’ve overlooked. And this taco soup is one of
those. I’ve heard her talk about how good it is…and I don’t know why
I’ve never made it. She has the recipe photocopied, along with three
other recipes on one piece of paper then tucked into her binder. If
you’ve got a mom with a recipe box or binder, go check it out! You just
never know what you might find!
Taco Soup
1 pound ground beef
1 large onion – diced
3 16-ounce cans chili beans - undrained
1 16-ounce can whole kernel corn - undrained
1 16-ounce can chopped tomatoes – undrained
1 15-ounce can tomato sauce
1 ½ cups water
1 4.5-ounce can diced green chilies
1 1 ¼ -ounce package taco seasoning mix
1 1-ounce envelope Ranch dressing mix
Brown ground beef with onion until browned and done. Add the rest of the ingredients and simmer about an hour.
Serve with tortilla chips, salsa, sour cream, cheese and tomatoes and any other taco fixin's you like!
