Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Caramel Apple Dump Cake

As you may...or may not know, IT Guy is a huge apple fan. 
Me? Not so much. It’s okay...just not my favorite. If we ever 
split a dessert and I let (HA!) him choose, he will almost always pick apple something. I may have a bite or two but that’s it. Hey...maybe that’s why he chooses apple!! It just now dawned 
on me that THAT might be his little scheme!! He gets the dessert all to himself if he picks apple! I’ll have to remedy this little situation next time. Anyway, when I made this quick and easy dessert, he was ALL over it! Oh my...he was in apple heaven. 
I thought it was pretty good, too...considering it’s not my first choice. You should try it to see if it might work its way into 
your dessert rotation. I bet it will!




Caramel Apple Dump Cake
1 yellow cake mix ~ dry
2 cans apple pie filling
1 11-ounce bag caramel baking bits (found in the baking aisle)
1 1/2 sticks butter ~ melted
Preheat oven to 350 degrees. Spray a 9x13 inch baking pan with cooking spray.
Empty both cans of the apple pie filling into the prepared pan.
Sprinkle the caramel bits over the apples.
Spread the DRY cake over the top of the apples and caramel bits then drizzle with the melted butter.
Bake for 45 minutes or until lightly brown and done.
Cool and serve with vanilla ice cream.
*Sprinkle cinnamon over the top of the apple pie filling for extra yumminess. And add about a cup of chopped pecans with the caramel bits for a fun crunch!





Here are the things you need. I show 
only 1 stick of butter...but you really need 1 1/2 sticks.






Throw the apples in a 
sprayed baking dish.






Sprinkle on the caramel bits. Add about 
1 cup of chopped pecans if you want.






Spread the DRY cake 
mix over the top.






Drizzle with the melted butter and bake!






Serve warm with vanilla ice cream!

Salted Caramel Apple Poke Cake

IT Guy loves, loves, LOVES anything apple. If we’re sharing a dessert in a restaurant, I’m going for the chocolate and he’ll pick apple every time. Me? I’m just “meh” about apple. But I have to say that not only did IT Guy totally enjoy this, I found it pretty tasty, too! And this is so easy! I think I could even teach IT Guy make it....HA!



Salted Caramel Apple Poke Cake
1 yellow cake mix ~ made according to the box direction in a 9x13 inch pan
1 can apple pie filling
1 14-ounce can sweetened condensed milk
1 teaspoon cinnamon
1/4 nutmeg
1 container salted caramel cake frosting
Preheat oven to 350 degrees. Spray a 9x13 inch pan with cooking spray.
Make and bake cake according to direction for 9x13 cake.
Combine nutmeg and cinnamon into sweetened condensed milk.
When cake is done, poke holes all over with the handle of a wooden spoon.
Pour sweetened condensed milk mixture in the holes.
Pour apple pie filling onto a large cutting board and dice apples with a large knife.
Spread diced apples over the cake.
Heat caramel frosting for a few seconds in the microwave. Stir to smooth. Heat for another few seconds until frosting is pourable.
Pour frosting over cake and spread to edges.
Cool cake then serve!



Here's what you need!




Mix up your cake. I made two 
small ones instead of a 9x13.




Stir the cinnamon and nutmeg into 
the sweetened condensed milk. I just added it right to the can and stirred it.




Bake the cake then poke holes

Dice the apples.




Spread the apples over the cake.




Warm the frosting, stir until 
smooth then pour over the cake.




Allow to cool then enjoy!!

Caramel Apple Bubble-Up

This little dessert is quick and easy and pretty delicious. IT Guy is always happy to eat anything apple related and doesn't care if the apples or fresh or canned. As long as it's sweet and can satisfy that craving, then he's a happy camper. Make sure you serve this with some vanilla ice cream. It'll make your world a little happier.

Caramel Apple Bubble-Up



2 cans apple pie filling (I used the Country Apple)
1 16-ounce can (8 count) refrigerated flaky biscuits ~ cut into eighths
1 cup caramel ice cream topping

Preheat oven to 375 degrees. Spray a 9x13 inch baking dish with cooking spray.

In a large bowl, combine the apple pie filling and the cut up biscuits.

Pour apple mixture into the prepared pan.

Drizzle half of the caramel ice cream topping over the biscuits.

Bake for 30 - 45 minutes or until biscuits are done and golden.

Serve with vanilla ice cream and remaining caramel topping.

Caramel Apple Crumble Pie

I'm not a huge apple pie person....I'd rather have chocolate. But IT Guy loves it so I make it for him from time to time. I had some leftover cake mix from another recipe so I used it as a topping for this pie. Remember "dump cakes"? Well...I guess you could call this a "dump pie". It turned out really good and yes..I managed to eat a slice. Or two.

Caramel Apple Crumble Pie



5 – 6 cups peeled, cored and sliced apples (I used Gala apples)
1/3 cup sugar
1/3 cup brown sugar
½ teaspoon cinnamon
¼ teaspoon nutmeg
2 tablespoons cornstarch
1 teaspoon vanilla extract
1 tablespoon lemon juice
1 cup dry yellow cake mix
1/3 cup caramel sauce (I used ice cream topping) plus extra for drizzling
1 cube butter ~ melted
1 pie crust (I used ready made but homemade is fine, too)

Preheat oven to 350 degrees.

In a medium bowl, combine the apples, lemon juice and vanilla.  Set aside.

Arrange pie crust in a 9-inch pie pan and drizzle with the 1/3 cup caramel sauce.

In a small bowl, stir together the brown sugar, sugar, cinnamon, nutmeg and cornstarch.

Sprinkle sugar mixture over apples then pour into the crust.

Sprinkle dry cake mix over the apples the drizzle the melted butter over the top.

Bake for 45 minutes until golden brown and the apples are done.

Cool to room temp, slice then drizzle with extra caramel sauce.

Serve with vanilla ice cream.

Apple Fritter Casserole

You guys know apple pie and IT Guy. He's all over anything that has to do with apples or pies so when I made this little ditty he was all over it as well. This is so easy and is perfect for a dessert or to serve at a brunch. break out the ice cream or the whipped cream for this dish because you're going to need it.

Apple Fritter Casserole



6 medium sized croissants ~ sliced in half horizontally
5 cups chopped apples ~ any kind (I used Honey Crisp)
6 tablespoons butter
1 cup brown sugar
2 tablespoons water
1 teaspoon cornstarch
1/4 teaspoon cinnamon
3 eggs
1/2 cup heavy cream
1/2 cup apple butter ~ store bought or homemade
1 cup powdered sugar
5 tablespoons heavy cream

In a large skillet, melt the butter. Add the brown sugar and stir to combine.

Stir in the apple and toss gently to coat. Allow to cook for 5 minutes. 

Combine the cornstarch and water in a small dish. Pour mixture into the apple mixture. Stir and allow to cook another five minutes.

Preheat oven to 375 degrees. Spray a 9x13 inch pan with cooking spray

Arrange the bottoms of the croissants in the prepared pan.

In a medium sized bowl, combine the 1/2 cup heavy cream, the apple butter, eggs and cinnamon. Whisk until smooth.

Pour half of the apple butter mixture over the croissants in the pan.

Spoon half of the cooked apple mixture over the croissants.

Place the tops of the croissants on top.

Pour remaining apple butter mixture on top of the croissants then the rest of the cooked apple mixture.

Press down on the top of the croissants with a spatula to help submerge them in the liquid.

Bake for 25 minutes or until lightly browned on top.

In a small bowl, whisk the powdered sugar and the 5 tablespoons cream until smooth.

Drizzle over warm casserole.

Apple Pie Oatmeal Cookies

I love oatmeal cookies and so does IT Guy. He also loves apple pie. Me? Not so much. It's okay I guess but I don't enjoy it like he does. But I figured how could I go wrong combining the two. And guess what? I wasn't wrong. IT Guy loved these! I think the only way they would have been better for him was if I had added a cup or so of chopped pecans....because he's all about those. These ended up crispy and delicious!

Apple Pie Oatmeal Cookies



¾ cup butter flavored shortening
1 cup brown sugar
½ cup granulated sugar
1 egg
¼ cup water
1 teaspoon vanilla
2 cups quick oats
1 1/4 cups flour
1 teaspoon salt
½ teaspoon baking soda
2 cups diced apples ~ small dice

Combine shortening, brown sugar, granulated sugar, egg, water and vanilla in a stand mixer. Cream together until smooth.

Add flour, oats, salt and baking soda. Beat until mixed well.

Add the diced apples and mix to combine.

Drop by spoonfuls onto baking sheets and bake for 12 – 15 minutes or until lightly browned and crisp.

Let set on cookie sheet for 5 minutes then transfer to a wire cooling rack.
