Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Pepperoni Pasta Rolls

Aren't lasagna rolls fun? These turned out so to be so easy and delicious. The guys around here love pepperoni and I love lasagne so I combined the two into one yummy dish! Since pepperoni is already cooked there's no pre-cooking required except the noodles and the onion and I'm not really sure that even qualifies as cooking. Basically you just throw everything together and bake for about 30 minutes and you've got a fun, easy and tasty dinner!

Pepperoni Pasta Rolls



10 - 12 lasagna noodles
1 cup ricotta cheese
1 egg
2 cups shredded mozzarella cheese
1 24-ounce jar pasta sauce
1 medium onion ~ diced
1 clove garlic ~ minced
1 tablespoon Italian seasoning
1 4-ounce package pepperoni slices
Salt and pepper to taste

Preheat oven to 350 degrees. Spray a 9x13 inch baking pan with cooking spray.

Boil lasagne noodles until al dente.

Saute the onion and garlic in a little olive oil until tender.

Add pasta sauce and simmer for 15 minutes.

In a medium bowl, combine the ricotta cheese, mozzarella cheese, egg, Italian seasoning and salt and pepper.

Spread a thin amount of the cheese mixture on each noodle.

Then top with 8 pepperoni slices. 

Starting at one end, gently roll noodle and place in prepared pan. Repeat until all ingredients are used. (I was able to get 10 rolls.)

Pour sauce over rolls. Top with grated Parmesan cheese, if desired.

Cover with foil and bake for 30 minutes until hot. Allow to sit for 10 minutes before serving.

Pepperoni Pizza Bites

I don't remember where I first saw these but when I did, I thought...GENIUS! What wasn't genius was that I didn't save the recipe! So I had to make up my own. I thought this turned out really good. I used pepperoni but you could use sausage or make them vegetarian. So many ways to do this...but you really should give them a try. What's fun is that these can be a main dish or an appetizer. And get the kids involved...this is right up their little alleys!!

Pepperoni Pizza Bites



3 cans Country Style Biscuits
Pizza Sauce
1 8-ounce package pepperoni
1 8-ounce Mozzarella cheese ~ cut into 1 inch pieces
3 tablespoons butter ~ melted
Parmesan cheese
Italian Seasoning

Preheat oven to 400 degrees. Spray a 9x13 inch pan with cooking spray.

Remove biscuits from can. Press flat to about 3 inches in diameter.

Place a heaping teaspoon of sauce on top of biscuit.

Place a pepperoni on top of the sauce, then a piece of cheese then another pepperoni.

Gather biscuit up around the edges to make a little pouch. 

Place seam side down into prepared pan.

Repeat until all biscuits are used. 

Brush tops with melted butter.

Sprinkle with Italian seasoning and Parmesan cheese.

Bake 15 - 20 minutes or until golden brown.

Serve with extra sauce if desired.

Mama Mary's Skillet Pepperoni Pizza....and a COUPON!!!

I just love a crispy crust pizza. So browning the bottom of the crust before baking was genius! Doing so gives the crust more of a "deep dish" baked feel to it. Of course you can use any kind of toppings on your pizza but because we love pepperoni the most, that's what I used. The whole idea of this recipe is to give you a different way to prepare your Mama Mary's pizza crust. What I also loved about this is how easy it was. I got a delicious pizza prepared, cooked and served in under 30 minutes!!! How cool is THAT? When you're in a hurry during the week or need a quick meal before you run out the door, then try this! I'm pretty sure you're going to love it as much as we did!

Mama Mary’s Skillet Pepperoni Pizza



1 12-inch cast iron or oven proof skillet
1 12-inch Mama Mary’s Original Crust
1 tablespoon Crisco shortening
4 ounces (about 1/2 cup) Mama Mary's Pizza Sauce
1 -2 cups shredded mozzarella cheese
20 - 30 Slices of Mama Mary’s Pepperoni
Olive Oil

Preheat oven at 425 degrees

Brush top of crust with olive oil.

Melt Crisco in the skillet over medium heat and then place crust in the skillet and cook for 5 minutes on the stove top.

Spread pizza sauce on the crust and add cheese and then pepperoni.

Place the skillet in the oven and cook for 10 minutes until cheese is melted and crust is lightly browned.

(If you don’t have an oven proof skillet, then remove pizza from the skillet and place on a pizza pan and cook for 5 minutes.)

Allow pizza to rest for about 5 minutes before transferring to a cutting surface.

Three Meat Treat

When we were Californians, one of our favorite places to go was a little pizza joint in the historic section of the little town we lived in. It had a great three meat pizza we almost always ordered. Since I live with a couple of carnivores, I thought this would be a welcomed treat! The guys loved it! In fact, IT Guy took the leftovers to work the next day and a couple of the other guys in the office did a double take when they saw what he had and commented that it looked and smelled delicious. And they were right! This is a crazy-good pizza! I used our favorite Thin & Crispy Mama's Mary's pizza crust on this, but you could use any kind and it will still be delicious!

Three Meat Treat



1 Mama Mary's Pizza Crust
1 cup pizza sauce
2 cups sharp cheddar cheese ~ grated
1/2 pound Italian Sausage ~ cooked and crumbled
30 slices pepperoni
1/2 pound bacon ~ diced and cooked crisp
1 medium onion ~ sliced and caramlized

Spread the sauce over the pizza crust.

Top with 1 cup of the grated cheese.

Top with cooked sausage, cooked bacon and pepperoni.

Add 1/2 of the caramelized onion on top of the meat.

Top with remaining cheese and the rest of the onion.

Bake for 15 minutes until hot and bubbly.

Pizza Casserole

We love pizza around our house so when I found this recipe I knew it would be a hit! And I was right! It's so easy to prepare and doesn't make a HUGE amount but is easily doubled if you need to feed a bigger crowd. You can change things up if you don't like pepperoni. Use sausage instead of ground beef. Add cheddar cheese along with the mozzarella. If you like it a little hotter, add some red pepper flakes. Olives!! Don't forget olives!! So many options! I think young kids would LOVE this....I know my three-year old granddaughter LOVED it...but it suits grown-ups, too. An easy family dinner sure to please everyone!

Pizza Casserole


2 cups uncooked egg noodles - any cut (I used bow-tie)
1/2 pound ground beef
1 onion - chopped
2 tablespoon olive oil
2 cloves garlic
1 green bell pepper - chopped
1 cup pepperoni slices - cut in half
16 oz pizza sauce - I was out and used Marinara sauce..worked great
4 tablespoons milk
1 cup mozzarella cheese - grated
Preheat oven to 350 degrees
Cook noodles according to package directions
In a medium skillet over medium-high heat, saute the onion and garlic in the olive oil for a couple of minutes. Add the chopped bell pepper and cook for another couple of minutes. Add the ground beef and cook until done. Drain fat. Stir in the noodles, pepperoni, pizza sauce and milk and mix well. Pour this mixture into a greased 2 quart casserole dish.
Bake for 20 minutes. Top with cheese then bake for an additional 10 minutes.

Another hot day in the south calls for another stove top meal! As much as we love pizza, I figured this would be a fun twist on an old favorite. Make sure you use a good thin sliced french bread. Leave the sugar out of the sauce if you don't car for it on the sweet side...or use a canned sauce if you're running short on time! Either way..this is fun and kid-friendly!

Grilled Cheese & Pepperoni Sandwiches 
with Pizza Dipping Sauce


French bread ~ thin sliced
Mozzarella cheese slices
Cheddar/Jack cheese slices
Pepperoni bites

Butter one side of a piece of bread then add a piece of mozzarella and a piece of cheddar/jack cheese. Sprinkle on some pepperoni bites. Top with two more slices of cheese and the other piece of buttered bread. Grill on a medium heated pan until golden brown.


Pizza Dipping Sauce

Olive oil
2 tablespoons butter
2 cloves garlic ~ minced
1 shallot ` diced
1 can crushed tomatoes
2 teaspoons Italian seasoning
1 - 2 teaspoons sugar depending on sweetness desired
Salt and pepper to taste

Add olive oil to medium hot pan then add butter.

Cook shallots and garlic until done then add the rest of the ingredients. Simmer for about 15 minutes and serve with sandwiches.

Let's make some sandwiches!!
 

Drizzle some olive oil in a medium 
hot pan then add the butter.
 

Scoop in the diced shallots and the minced 
garlic and let in cook for a few minutes.
 

Add the rest of the sauce ingredients.
 

Buttah ya' bread!
 

Lay two pieces of cheese on the unbuttered 
side of a piece of bread. Then sprinkle on some 
pepperoni and top with more cheese. 
I used 4 slices...two mozzarella and two cheddar/jack.
 

Plop the sammies on a medium heated griddle. 
Not too hot...you don't want the outside 
done before the inside. 
Low and slow is the name of the game.
 

See how pretty and golden brown?
 

Slice the sammies in half and serve with the sauce!
