Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Country Apple Coffee Cake

I'm sure a lot of us are expecting out of town company this week and might need a quick and easy breakfast treat. This goes together really fast and is so delicious. We devoured it pretty quick. Double the recipe and put it in a 9x13 inch pan if you're feeding a crowd!

Country Apple Coffeecake



2 tablespoons butter – melted
2 granny smith apples – peeled and diced
1 16-ounce can flaky biscuits
1/3 cup brown sugar – packed
½ teaspoon cinnamon
1/3 cup light corn syrup
1 egg
½ cup chopped pecans

Preheat oven to 350 degrees. Spray 1 9-inch cake pan with cooking spray.

Sprinkle 1 diced apple in the bottom of the prepared cake pan.

Cut each biscuits into fourths and place on top of apples, pointed end up.

Sprinkle biscuits with remaining diced apple.

In a medium bowl, combine the brown sugar, cinnamon, corn syrup, egg and pecans. Stir until well mixed and spoon over apple/biscuit mixture.

Bake for 40 – 45 minutes until golden brown. Top with powdered sugar glaze, if desired.

Val's Apple Pie

It's no secret that apple pie is not my number one choice in a dessert. It's good...just not my first choice. But, I have family members who LOVE it...and that's why I make it. It's almost always on the table at Thanksgiving because my mom loves it and IT Guy always enjoys it, too. This pie is one of the best I've ever had. I use my apple peeler/corer to cut the apples very thin so I can pile them up. Save this recipe for when you need to pull out the big guns to please someone.

Val’s Apple Pie

2 pie crusts
5 – 6 cups apples
1/3 cup sugar
1/3 cup brown sugar
½ teaspoon cinnamon
¼ teaspoon nutmeg
2 tablespoons cornstarch
1 ½ tablespoons butter – cut in small pieces
1 teaspoon vanilla extract
1 tablespoon lemon juice
2 tablespoons heavy cream
Cinnamon/sugar for sprinkling

Preheat oven to 450 degrees.

Peel and core apples. Slice thin.  Pour lemon juice and vanilla over apples and stir. Set aside.

Place 1 pie crust in the bottom of a 9-inch pie pan.

Combine sugars, cinnamon, nutmeg and cornstarch. Sprinkle over apples and stir gently. Place them in the pie crust. Dot with butter.

Place 2nd pie crust over apples then crimp edges to seal. Brush heavy cream over top crust then sprinkle with cinnamon/sugar. Prick upper crust to vent.

Place pie pan on a cookie sheet then bake in preheated oven for 10 minutes. Reduce heat to 350 degrees and bake for another 35 – 45 minutes until done. If crust starts to brown excessively, cover with foil the last 15 minutes or so. Allow to set for a while before slicing.

I enjoy an apple pie from time to time. My favorite pie would have to be some kind of berry pie...but apple's good, too. Apple pie is one of IT Guy's deals. He loves them. If we go out to eat and split a dessert, he always goes for the apple where I am headed toward something berry-ish or chocolate. But this dessert....this one right here?? This dessert might make me a believer where apples are concerned. And IT Guy? I think his exact words were "this might be the best thing you've ever made". Whoa...and I've made lots of stuff. The ingredients of this dessert can me made ahead of time and then you can put the parfaits together in assembly line fashion and serve.  SO STINKIN' GOOD!!! Go ahead. Impress your friends.

Apple Pie Parfaits


Crumbled Crust:

1 pie crust – store purchased or homemade
2 tablespoon butter - melted
1 tablespoon ground cinnamon
¼ cup sugar

Roll out pie dough into a thin circle – about 14 inches in diameter. Place a on a cookie sheet or pizza stone. Brush crust with melted butter and sprinkle with cinnamon and sugar. Bake at 375 degrees for 20 minutes or until golden brown and crispy.

Crumble crust and set aside.

Apples:

2 Granny Smith Apples – chopped, about 4 cups
3 tablespoons butter
1 tablespoon cinnamon
1 teaspoon nutmeg
¼ cup sugar
¼ cup brown sugar
½ teaspoon vanilla

In a large skillet, add butter, apples, cinnamon, nutmeg, sugars and vanilla. Saute until apples are tender and you’ve got a nice syrup. Remove from heat.

In a parfait glass, add 2 tablespoons crumbled crust, some apples with syrup, and a scoop of vanilla ice cream. Repeat. Top with whipped cream and drizzle with caramel syrup, if desired.


Here's all you need for this yumminess.


Roll out your pie dough then brush 
it with butter and sprinkle with cinnamon/sugar. 
I used my pizza stone and it worked great!


Bake it until it's golden brown.


Crumble it and set it aside.


Dice your apples.


Throw your butter into a skillet...


..then add your diced apples, 
sugars and cinnamon.


Let that cook for a while until 
the apples are tender and the syrup is syrup-y.


Layer all the stuff until it looks like this!! 
Marvel at how delicious this looks!!  
And it tastes even better!!!

IT Guy enjoys going to a certain old-timey-type-country-store-type restaurant to eat from time to time. Can I say Cracker Barrel on here? Whatever. He likes it. So when he can pull me out of my OWN kitchen long enough, we'll saunter down there and enjoy their food. And you know how it is....they serve you tons of stuff. And so many choices! Of course, one of his favorites is their country fried steak. He'd probably say it doesn't hold a candle to mine...he's that kind of guy. And one of the sides he almost always gets is their fried apples. And I have to admit, they're pretty tasty. So the other day, when we went to my brother's house for Mother's Day dinner, I decided to take fried apples to go along with the pork roast my SIL was serving. So yeah....YUM! These were so good....it was like eating apple pie without the crust. They were perfect! We loved them....you've GOT to try them. And to make it even more appealing...they were so easy! And something you just don't see everyday as a side dish. Go ahead and make them...you know you want to!!

Fried Apples


8 golden delicious apples
½ cup brown sugar
1/3 cup granulated sugar
¼ cup butter (1/2 stick)
1 tablespoon cinnamon
½ cup water
3 tablespoons flour (I used Wondra)

Wash and slice apples then set aside.

In a large skillet, melt butter. Add sugars and cinnamon. Stir until combined then add sliced apples. Stir to coat. Cover skillet and allow apples to cook on medium heat for about 30 minutes or until soft, stirring once or twice.  Remove apples from skillet with a slotted spoon and place in a bowl.

Mix water and flour together then pour into juices in the skillet. Heat until bubbly and thick then pour over apples in bowl. Stir gently to coat then transfer to a serving bowl.


Here's everything you need except the cinnamon.
Oops. I used it, though.
 
 
Wash and slices your apples. 
I cut each of mine into 8 wedges.
 
 
Melt the butter then add the sugars and cinnamon.
 
 

Dump in the apples and give 
them a stir to coat them.
 
 
Cover them and let them stew in their 
own juices for about 30 minutes.
 
 
Remove the cooked apples from 
the pan but leave the juice.
 
 
Combine the water and flour....
 
 
..then pour that into the apples juices in the pan.
 
 
Let it cook for a bit to thicken then pour over the apples. 
Stir to coat all the apples.
 
 

Cracker Barrel ain't got nuthin' on me, baby!!
