I was watching Julie & Julia the other night while IT Guy
was snoozing on the couch. Of all the things that are prepared in that
movie, the one thing that gets me every time is the scene where Julie is
toasting french bread in a skillet so she and her husband can eat
bruschetta. To see the way they devour it makes my mouth water every
stinkin' time! I thought....Bah! Enough of this foolishness....I'm going
to make my own! I made it one evening when I had leftovers to serve IT
Guy so I could eat the whole lot of it by myself. Okay...I did give him
one piece and he really liked it...but that's ALL he got. If you've
never had bruschetta, you really should try it. Your life will be
complete.
Grilled Bruschetta
1 loaf fresh french bread ~ cut into 1/2 inch slices, then cut in half (you probably only need half a loaf)
Olive Oil
1/2 stick butter
2 garlic cloves
6 - 8 Roma tomatoes ~ seeded, diced
1/3 cup fresh chopped basil
1 teaspoon salt
Pepper to taste
8 ounces Mozzarella cheese (use fresh if you can find it), sliced
Preheat oven to 350 degrees.
Combine tomato, basil and salt and pepper. Set aside.
Heat a large skillet over medium heat.
Drizzle a little olive oil in the heated skillet then add the butter and toast the bread until golden brown on both sides.
Slice a garlic clove in half lengthwise and rub each piece of toasted bread with the garlic.
Place toasted bread on a cookie sheet and lay a slice of cheese on each piece.
Heat in the oven for about 10 minutes or so until the cheese begins to melt. Remove from the oven.
Place a couple of tablespoons of the tomato/basil mixture on top of the toasted bread.
Serve!
