I spied CARAMEL sweetened condensed milk at the grocery store yesterday so I scooped up a can along with some other ingredients to make caramel banana pudding. Yes...adding caramel to banana pudding is a thing. At least it's MY thing. Yummy! Now, I'm a big lover of banana pudding and caramel so I knew all would be right with the world if I combined the two. And I was right. This is SO good....I'm pretty sure I'll be your new best friend after you try it!
Caramel Banana Pudding
1 5-ounce box vanilla INSTANT pudding mix
1 14-ounce can CARAMEL sweetened condensed milk
1 8-ounce container Cool Whip
2 cups milk
4-5 bananas ~ sliced
1 box vanilla wafers
1 jar caramel ice cream topping (you won't need the whole jar....or maybe you will ;-) )
Spray a 9x13 inch pan with cooking spray.
Place a layer of vanilla wafers in the bottom of the pan. Then scatter half of the sliced bananas over the wafers.
Drizzle some of the caramel ice cream topping over bananas. (I think I used about 1/4 cup.)
In a medium bowl, whisk together the pudding mix, milk and sweetened condensed milk until smooth.
Gently fold the Cool Whip into the pudding mixture.
Spread half of the pudding mixture over the wafer/banana layer.
Add another layer of wafers and bananas and drizzle with more caramel topping.
Spoon the remaining pudding mixture over the top.
Crush a few vanilla wafers and sprinkle over the top of the pudding then drizzle with more caramel topping.
Cover with plastic wrap and chill in the fridge for several hours or overnight.
