What's better than an easy
dessert? One with apples, that's what! This is a great little treat when
you need something fast. It can be easily doubled to feed more people
but this small amount was great for us. I served ours with caramel sauce
because I was out of vanilla ice cream but I can only imagine what this
would have tasted like with a cold scoop of ice cream melting down into
the nooks and crannies. Guess that's a good excuse to make it
again....right?
Apple Cobbler Cake

4 - 5 large apples ~ peeled and sliced (I used Gala apples)
1 1/4 cups + 2 tablespoons sugar ~ divided use
1 teaspoons cinnamon
1/4 cup butter ~ softened
2 eggs
1 cups flour
Preheat oven to 325 degrees. Spray a 9x9 inch baking pan with cooking spray.
Place apples into prepared pan.
In a small bowl, mix 1/4 cup + 2 tablespoons of the sugar and the cinnamon. Sprinkle half over apples.
In a mixing bowl, cream the butter and remaining 1 cup of sugar.
Add eggs and flour and mix well.
Pour mixture over apples and spread to cover apples.
Sprinkle remaining cinnamon/sugar mixture over the top of the batter.
Bake for an 60 - 70 minutes.
Serve hot or cold....or try it with ice cream!

Here's what you need.

Slice the apples and place
in the bottom of your pan.

Mix 1/4 cup + the 2 tablespoons
of sugar and cinnamon together.

Sprinkle half of the cinnamon/sugar
mixture over the apples.

Combine the butter and 1
cup of the remaining sugar.

Add the eggs.

Then the flour.

Spread flour mixture over the
apples then sprinkle with remaining
cinnamon/sugar mixture.

Bake!

Serve with ice cream or
caramel sauce or both!
