Cheeseburger Combo Soup

1 pound ground beef
1 medium onion ~ diced
3/4 cup diced carrots
3/4 cup chopped celery
1 teaspoon dried basil
1 teaspoon dried parsley
Salt & pepper to taste
4 tablespoons butter
1 32-ounce container chicken broth
3 cups Southern Style Hashbrowns
1/4 cup all-purpose flour
2 cups grated Cheddar cheese
1 1/2 cups milk
1/4 cup sour cream
In a large pot, melt 1 tablespoon of the butter. Add the veggies and saute about 5 minutes.
Add the ground beef and cook until beef is done.
Pour in the chicken broth and add the potatoes and spices.
Bring to a boil and simmer about 15 minutes.
In a medium saucepan, melt the remaining butter over medium heat.
Add the flour and cook about a minute.
Add the milk and whisk until smooth.
Add milk mixture to the large pot. Bring to a boil then reduce to a simmer.
Stir in the cheese until melted then add the sour cream and stir.

Let's get started!

Chop your veggies....

...then add them to a large
pot with a little butter.

Then add the ground beef and
cook until done.

Melt the remaining butter then add
the flour and cook for a minute or so.

Then add the milk and cook until thickened.

Add the chicken broth, hashbrowns
and seasonings to the meat mixture in the large pot.

Then add the thickened milk mixture.

Add the grated cheese and stir until melted.

Add the sour cream and stir through until warmed.

Serve it up with some extra cheese, diced tomatoes and a few diced green onions!
