IT Guy and I love pastrami. So it just made sense that we would love
corned beef brisket. And I was right. Making this roast is so easy and
the end result is tender and flavorful. Don't let the picture of the
cooked meat throw you off. Brisket has a pinkish tint to it after it
cooks. IT Guy likes cabbage but I'm not big fan so we had potatoes on
the side. The sandwiches made from the leftovers were incredible, too!
Just a really good meal and easy to boot!
Corned Beef Brisket with Glaze
1 2-pound corned beef brisket
1/2 cup brown sugar
1/4 cup cider vinegar
1/4 cup prepared mustard
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Place brisket in a large stock pot and cover with water.
Add spices that come with brisket.
Cover and bring to a boil. Lower heat to a simmer and cook about 3 hours.
In
a small saucepan, combine brown sugar, apple cider vinegar, mustard,
garlic powder and onion powder. Cook over medium heat, stirring
occasionally, for 5 minutes.
When brisket is done cooking, place in a baking pan and spread glaze over the meat.
Bake at 375° for about 15 minutes, basting every 5 minutes.
Allow to rest for about 10 minutes before slicing.
