Southern Style Peach Cobbler

I had a friend ask me the other day if I had a good peach cobbler recipe. She needed one because her daughter had requested peach cobbler for her birthday. It's funny...because I had JUST been thinking the day before how I need one here on SFFS. I love a cobbler with a yummy biscuit topping....so here you go! This went super fast at our house and my friend, being who she is...got an advance copy of this recipe for her daughter's birthday dessert. She served hers with Dairy Queen soft serve ice cream which I thought was GENIUS!!! This is so yummy right out of the oven but truth be told...it's yummy heated up in the microwave, too!

Southern Style Peach Cobbler



6 cups peaches ~ cut into large chunks (fresh or frozen)
1/3 cup sugar
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon lemon juice
2 tablespoons cornstarch

Preheat oven to 400 degrees. Spray a 9x13 inch baking dish with cooking spray.

Place peaches and lemon juice in a medium sized bowl.

In a small bowl, combine the rest of the ingredients then sprinkle over the peaches. Stir to mix then pour into prepared pan.

Bake for 10 minutes.



For the topping

2 cups flour
1/2 cup sugar
1/2 cup brown sugar
2 teaspoons baking powder
1 teaspoon salt
1 1/2 sticks cold butter ~ cut into small pieces
1/2 cup boiling water

In a medium bowl, combine the flour, sugar, brown sugar, baking powder and salt.

Using a pastry cutter or your fingers, cut the butter into the flour mixture until the mixture is coarse.

Pour the boiling water into the flour mixture and stir until it comes together.

Drop topping mixture onto the peaches in large spoonfuls. Not every part will be covered but it will come together as it's baking.

Sprinkle some sugar over the top of the cobbler.

Bake for 30 - 40 minutes or until topping is golden brown.

Serve with vanilla ice cream.

Pecan Cobbler

I usually only make pecan pie during the holidays and even then....it's iffy. It's not my favorite or even IT Guy's favorite but he does really like it. That's how I knew he would really like this. This "cobbler" is super-duper easy to make and once you read the directions on how it's made, you're going be like....what the what? And you get what? Yep...you get a really good dessert that's a cross between a pecan pie and a gooey cobbler. And make sure you've got some vanilla ice cream on hand...you're gonna need it. I promise.

Pecan Cobbler



6 tablespoons butter (no substitutions)
1 1/2 cups pecan halves
1 and 1/2 cups self-rising flour
1 and 1/2 cups granulated sugar
2/3 cup milk
1 teaspoon vanilla
1 and 1/2 cups packed light brown sugar
1 and 1/2 cups hot water

 

Preheat oven to 350 degrees.

Place butter in a 9x13 inch baking dish and melt in the oven.

Sprinkle the pecans over melted butter.

In a medium bowl, mix flour, sugar, milk and vanilla. Stir to combine.

Pour batter over butter and pecans but do not stir.

Sprinkle brown sugar evenly over batter but do not stir.

Carefully pour the hot water over the mixture but do not stir.
 

Bake 30 to 35 minutes or until golden brown.

Serve with ice cream!

Strawberry Cobbler

Cobblers are one of my most favorite things. Cherry and berry are the best, in my opinion. Also...I love peach. I don't think I've ever made a strawberry cobbler before, though. But because I have a huge bag of strawberries to use up...I thought..ehhh..why not? Oh my!!! Where has this been all my life! This lasted practically no time at our house...you'd think these people never get dessert! I think IT Guy had it for breakfast a couple of times, as a matter of fact. Really good and the Bisquick topping makes it super simple! Try it...NOW!

Strawberry Cobbler

4 cups quartered strawberries (fresh or frozen)
1 1/2 cups sugar ~ divided use
1 teaspoon vanilla
1 cup Bisquick
1 egg
1 stick butter ~ melted
1/2 stick butter ~ melted
Sugar for sprinkling ~ optional

In a medium bowl, combine strawberries, 1/2 cup sugar and vanilla. Allow to sit at room temp 2 hours.

Preheat oven to 350 degrees. Spray a 9x13 inch baking pan with cooking spray.

Spread strawberry mixture in the bottom of the prepared pan.

In a medium bowl, combine the Bisquick, sugar, egg and 1/2 stick melted butter.

Scatter Bisquick mixture over berries.

Pour remaining 1 stick melted butter over Bisquick mixture.

Sprinkle with a little sugar.

Bake for 35 - 40 minutes until lightly browned.

Apple Cobbler Cake

What's better than an easy dessert? One with apples, that's what! This is a great little treat when you need something fast. It can be easily doubled to feed more people but this small amount was great for us. I served ours with caramel sauce because I was out of vanilla ice cream but I can only imagine what this would have tasted like with a cold scoop of ice cream melting down into the nooks and crannies. Guess that's a good excuse to make it again....right?

Apple Cobbler Cake



4 - 5 large apples ~ peeled and sliced (I used Gala apples)
1 1/4 cups + 2 tablespoons sugar ~ divided use
1 teaspoons cinnamon
1/4 cup butter ~ softened
2 eggs
1 cups flour

Preheat oven to 325 degrees. Spray a 9x9 inch baking pan with cooking spray.

Place apples into prepared pan.

In a small bowl, mix 1/4 cup + 2 tablespoons of the sugar and the cinnamon. Sprinkle half over apples.

In a mixing bowl, cream the butter and remaining 1 cup of sugar.

Add eggs and flour and mix well.

Pour mixture over apples and spread to cover apples.

Sprinkle remaining cinnamon/sugar mixture over the top of the batter.

Bake for an 60 - 70 minutes.

Serve hot or cold....or try it with ice cream!

Super Simple Blackberry Cobbler

I think a cherry or berry pie is one of my all time favorite desserts. And a simple version of either one of those is even better! And I love a good cobbler crust. I've always called this particular kind of crust a "pour crust" because you, well, you pour it over the fruit. This cobbler would work well with almost any kind of fruit. I used frozen blackberries but peaches would be scrumptious, too. Give it a try for a quick and easy weeknight dessert.

Super Simple Blackberry Cobbler



1 cup flour
1/2 cup sugar
1/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup unsalted butter, melted
1/2 cup heavy cream
3 cups fresh or frozen blackberries
1/8 teaspoon ground nutmeg
1 tablespoon sugar


Preheat oven to 350 degrees. Spray an 8x8 inch pan with cooking spray.

In a bowl, mix together the flour, 1/2 cup of sugar, baking powder, salt, milk, melted butter, and cream until smooth.

In a medium bowl, mix berries with 1/4 cup of sugar.

Spread the blackberries into your prepared pan.

Spread batter on top of berries. Sprinkle the top of the batter with the nutmeg and 1 tablespoon of sugar.

Bake until the top is lightly browned, about an hour.

Allow to cool before serving.
Serve with ice cream or sweetened whipped cream.

Peach Cobbler


IT Guy and I were in AZ a while ago and one thing I did when I was there, was to do through all of my mother-in-law's recipes. For someone who's not a big fan of cooking, she sure had a LOT. It was so fun to see the recipes she'd cut out of magazines and newspapers....to see what appealed to her. But the one thing I enjoyed the most, was seeing the recipes she had hand written or typed out because I knew they must have been extra special for her to take the time to do that. Here's one that I knew I wanted to try the minute I saw it. Peach cobbler....because who doesn't love that, right?

Peach Cobbler



1 cup flour
1 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
4 cups peaches (fresh, frozen or canned)
1 teaspoon lemon juice
2/3 cup sugar
1 tablespoon flour
1/4 cinnamon
1/2 cup butter

Heat oven to 350 degrees. Spray a 9x13 inch pan with cooking spray.

In a medium bowl, combine the 1 cup of flour, 1 cup of sugar, baking powder and salt. Stir in the milk and set aside.

In a medium saucepan, combine the peaches, lemon juice, 2/3 cup sugar, 1 tablespoon of flour and the cinnamon.

Stir to combine ingredients and heat to just under boiling.

Melt butter and pour into the prepared 9x13 inch pan.

Pour heated fruit mixture over butter.

Pour batter mixture over fruit in pan.

Bake for 1 hour until golden brown on top.


Here's what you'll need.

cup of sugar, baking powder and salt.


Then pour in the milk and stir. Set aside.


In a saucepan, combine the peaches, 
lemon juice, 2/3 cup sugar and the cinnamon.


Het to just under boiling.


Melt the butter and pour into a 9x13 inch pan.


Then pour in the batter mixture.


Then the fruit. I added blackberries to mine. 
Yummy! About two cups.


Then bake until golden brown. 
Serve with ice cream for more deliciousness.
