Chicken Alfredo Ziti Bake

I had to take something to a friends house last week for a get-together. I don’t know why but potluck type functions always throw me into a small panic because I think ACK!! I DON’T HAVE ANYTHING! MY MIND IS BLANK! WHAT IF THEY DON’T LIKE IT? I DON”T KNOW WHAT TO DOOOOOOOO!!!! That’s my insecurities talking, right there. You probably can’t tell by my page and my friends would think I was nuts, but I’ve always been an introvert. I’m more comfortable blending in with the wall paper. I always pushed my older brother ahead of me...to talk for me...and I do the same with IT Guy. Anyway...I settled on this dish to take to try out for my church friends. I figured, if anyone can be forgiving on a dish that may or may not be fit to eat, they can. Turns out, it turned out! This was excellent. And the way I could tell it was good? The dish was nearly wiped clean. I think there was only one tiny serving left when it was time to go. So yay!




Chicken Alfredo Ziti Bake
12 ounces ziti pasta ~ cooked al dente
3 cups cooked, shredded chicken (can use rotisserie chicken)
1 cup fresh grated Parmesan cheese
3 tablespoons butter
3 tablespoons flour
3 - 4 garlic cloves ~ minced
1 cup chicken stock
1 cup milk
3 cups grated mozzarella cheese
Salt & pepper to taste
Preheat oven to 375 degrees. Spray a 9x13 inch baking dish with cooking spray.
In a medium sauce pan, melt the butter over medium heat.
Add the minced garlic and cook until fragrant...about 2 minutes.
Whisk in the flour and cook and stir an additional 2 minutes.
Pour in the chicken stock and the milk and cook and stir until thickened.
Add the grated Parmesan cheese and the salt and pepper. Stir until cheese melts.
Cook pasta and drain. Return pasta to the pot and add the cooked, shredded chicken.
Pour in the Alfredo sauce and toss to coat.
Add half of the pasta mixture to the baking pan then half of the mozzarella cheese.
Repeat with remaining pasta mixture and mozzarella cheese.
Bake for 25 - 30 minutes until cheese has melted and begins to brown.



Here we go! Let's cook!




Cook the garlic in the butter for a few minutes.




Then add the flour and cook and stir for a minute or so.




Add the chicken stock and the milk and cook until thickened. Then add the parmesan cheese, salt and pepper and stir until cheese has melted.




Pour the sauce over the cooked and drained pasta and the cooked and shredded chicken. Stir to coat.




Pour half of the pasta mixture into the prepared pan then half of the mozzarella cheese. Repeat with remaining pasta mixture and cheese.




Bake and serve!

Chicken & Broccoli Alfredo

Yum, yum and yum! Not much else to say about this. How can you go wrong with pasta and Alfredo? Well, you can't. And easy? So easy. This dish always reminds me of #2 Son because it's one of his favorites. You gotta try this simple and filling meal!

2 pounds boneless skinless chicken breasts ~ large dice
Salt & pepper
1 12-ounce bag steam & serve broccoli florets ~ cooked according to package directions
4 tablespoons butter 1 cup heavy cream
1 clove garlic ~ minced
1/2 cup grated parmesan cheese
1 tablespoons dried parsley
8 ounces fettuccine ~ cooked and drained

 
Melt butter in a medium saucepan over medium low heat.

Add cream and simmer for 5 minutes then add garlic.

Stir in parsley, cheese and salt and pepper. Whisk quickly.

Add cooked broccoli. Set aside.

In a large skillet, saute the chicken in a little olive oil until cooked through. Season with salt and pepper.

Add cooked pasta to the chicken then add the Alfredo sauce and stir. Heat through and serve.

Chicken Alfredo Pizza & a $1.00 off coupon from Mama Mary's

If you're a fan of chicken alfredo and if you're a fan of fast and easy then you are in luck, my friend! Using a Mama Mary's pizza crust makes this meal so convenient and simple. This took me less than 30 minutes to throw together and bake. And we loved it! We had one tiny piece leftover and when I went to grab it the next day...I was too late!!! If you don't want to bake your own chicken, then grab a rotisserie chicken from the grocery store to make this pizza even easier! Really delicious!!!

Chicken Alfredo Pizza



1 Mama Mary's pizza crust ~ any kind
1 cup jarred alfredo sauce
2 boneless, skinless chicken breasts ~ cooked and diced
1 8-ounce mozzarella cheese ~ grated
1/2 cup sun-dried tomatoes
1/2 cup sliced red onion

Preheat oven to 425 degrees.

Spread alfredo sauce over pizza crust.

Scatter chicken over sauce.

Sprinkle with grated cheese.

Scatter tomatoes and onions over the cheese. 

Bake pizza for about 15 minutes until cheese is melted and pizza is bubbly.

Crock Pot Chicken Alfredo

Nothing's better than throwing a bunch of ingredients into one pot and then basically walking away from it until you're ready to eat. That's what this dish is all about. Aside from cooking some pasta, you don't really have to do much with this except give it a few stirs throughout the day. Really easy...really yummy. Really.

Crock Pot Chicken Alfredo



3 boneless, skinless chicken breasts, cubed
1 red bell pepper, diced
2 cups frozen broccoli florets
1-8 ounce package cream cheese ~ cubed

3/4 cup grated Parmesan cheese
1/2 cup butter ~ melted
1/2 cup whole milk
1 teaspoon garlic powder
1/4 teaspoon dried basil
Salt and pepper to taste
Pasta

Place all ingredients into your crock pot.

Stir.

Cook on low for 5 - 6 hours, stirring occasionally.

Serve over fettuccine noodles.
