Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Cinnamon Toast Breakfast Bake

There’s nothing better than breakfast for dessert....or dinner, right? I’m not much on breakfast for breakfast but serve it to me any other time and I’m okay with that. This little casserole is easy and works for just about any time. I served ours with a cream cheese frosting but maple syrup would be great, too. It reheats nicely in the microwave if by chance you have any leftovers. Keep this around for the upcoming holidays when you need a quick and easy dish to serve!





Cinnamon Toast Breakfast Bake

1 loaf french bread ~ cut into 1/2 in slices
1 cup milk
6 eggs
2 teaspoons vanilla
6 teaspoons cinnamon ~ divided use
2 teaspoons nutmeg
1/2 cup brown sugar
1 cup ready made (or homemade) cream cheese frosting OR maple syrup

Preheat oven to 350 degrees. Spray a 9x13 inch casserole dish with cooking spray.

Arrange one layer of the sliced french bread in the bottom of the prepared pan.

In a medium bowl, whisk together the eggs, milk, vanilla, 3 teaspoons of the cinnamon, and nutmeg.

Pour half of the egg/milk mixture over the sliced bread in the casserole dish.

Arrange the remaining bread on top of the bread in the dish and pour the egg/milk mixture over everything.

In a small bowl, combine the brown sugar and the remaining cinnamon and sprinkle it on top of the soaked bread.
(At this point you can cover with foil and chill it for several hours or overnight to cook later.)

Bake for 25 minutes or until lightly browned.

Allow to cool about 10 minutes then serve with cream cheese frosting or maple syrup.

Breakfast Tacos

These breakfast tacos are super easy to make. If you're not a chorizo fan, like me, then leave it out and use all breakfast sausage. IT Guy loves chorizo so he really liked these. Not only do they make a great breakfast, but they're yummy for dinner too! Also if you've got any leftover, wrap in a tortilla for a burrito!

Breakfast Tacos 



1 9-ounce package chorizo sausage
8 ounces breakfast sausage
8 eggs
1/4 cup milk
Grated Monterey Jack cheese ~ about 1 cup or so
8 - 10 flour tortillas
Salsa

In a large skillet, cook both sausages until done. Remove to a plate.

In a medium bowl, whisk together the eggs and milk. Salt and pepper if desired.

Pour eggs into the skillet and scramble until almost done.

Add the meat back into the skillet with the eggs and cook and stir until done.

Heat flour tortillas in the microwave.

Place a small amount of grated cheese into the tortillas, then some of the egg mixture. Top with salsa.

Serve!

Breakfast Sloppy Joe's

Holy cow but these were good! IT Guy was all over these for dinner and there was enough leftover that he had some for breakfast, too! These would be great to serve at a breakfast buffet type event but like I said....we had them for dinner because I have an aversion to eating breakfast food for breakfast. No kidding, you guys....try them SOON!

Breakfast Sloppy Joes



1 8-pack package of English Muffins
1 pound breakfast sausage
2 cups grated cheese
8 eggs
2 cups milk plus a little extra for the scrambled eggs
1/4 cup flour
1/4 drippings from cooked sausage OR 1/4 cup butter
Salt and pepper to taste

Lightly toast English Muffins then place on a cookie sheet.

In a large cast iron skillet, cook sausage until done. Remove cooked sausage to a plate.

Pour off all but 1/4 cup drippings (or use butter if there's not enough drippings). Stir in flour and cook for 3 - 5 minutes, stirring constantly.

Pour in the milk, salt and pepper to taste and cook and stir until thick.

Stir cooked sausage into the gravy. Set aside but keep warm.

In a clean skillet, scramble the eggs with a little milk, salt and pepper.

Spoon sausage gravy over the English Muffins then add some scrambled eggs.

Sprinkle cheese over the top and broil on high for a minute or two to melt the cheese and warm through.

Sausage Breakfast Hash

Back in December, IT Guy and I had our 40th wedding anniversary. I know what you're thinking....how on EARTH can someone put up with the likes of me for that long. The struggle is real...but he's managed. Anyway...we went to Ashville, NC to the Biltmore for a couple of days, thanks to our kids who combined their efforts and gave us that nice gift. The hotel where we stayed had a breakfast buffet which IT Guy thoroughly enjoyed and I tolerated since I'm not a big breakfast eater. One thing that was served was a really good hash type dish. I told IT Guy that I was going to go home and recreate it and I just now got around to doing it. Now, I don't know how the hotel made theirs, but mine was delicious! Not only was it good but it was so easy to make! Of course, we had ours for dinner, but this is so simple to make that fixing it for a Saturday morning breakfast would be nooooo problem. We had some leftover so I threw a little in a flour tortilla with some cheese and salsa for IT Guy to take to work! Give it a try...I think you'll really enjoy it!

Sausage Breakfast Hash



1 pound breakfast sausage
3 cups frozen southern style hash browns
1 medium onion ~ diced
2 bell peppers ~ diced
Olive oil
Salt & pepper to taste

In a large skillet, cook the sausage in a little olive oil until done. Remove to a bowl.

In the same skillet, add a little more olive oil then add the hash browns, onion and bell pepper. Season with salt and pepper then cook until hashbrowns are done and veggies are tender/crisp...about 10 minutes.

Stir the sausage back into the skillet with the hashbrown mixture and warm through.

Serve with eggs cooked any style!

Sausage & Gravy Breakfast Casserole

As you may....or may not know, breakfast isn't my thang. At least in the morning. I don't really like any food in the morning. Breakfast for dinner is fine, though. Now IT Guy, he's a different kettle of fish except he doesn't like fish...but I digress. Not only do I not like to eat in the morning, I'm not that keen on smelling it either. I know...it's weird, huh? Before you get all up in arms and think I don't cook breakfast for my husband, let me tell you I do.

Sometimes.

Maybe once a week.

Or once a month.

Fine. I hardly EVER cook breakfast for him, okay?

But he LOVES breakfast...LOVES. If I would get up at the crack of darkness and cook him eggs and bacon and whatever else...he would...well, he'd be in breakfast heaven. But guess what? That ain't never happened and it isn't GOING to happen. I like to cook breakfast about 10:00 am on a Saturday after I've slept in. Or cook it for dinner. Which is what I did with this dish. I saw a picture of this type of casserole run through my Pinterest the other day and I knew IT Guy would fall in love with me all over again if I made this. And I was right. I used canned biscuits but if you're adverse to using the canned kind, then by all means make your own. Homemade sausage gravy is the only way to go here and don't worry...it's really easy! This casserole would be wonderful for breakfast...I guess, but we loved it for dinner and the leftovers heat up great so you can have yourself a quick snack as you're running out the door in the morning. Super good, guys!


Sausage & Gravy 
Breakfast Casserole



1 12-ounce container buttermilk biscuits
6 eggs
Sausage gravy ~ recipe follows
1 1/2 cups shredded cheddar cheese
1/2 cup milk
Salt and pepper to taste

1 pound breakfast sausage
2 tablespoons flour
2 cups milk
Pepper to taste

In a large skillet, cook the sausage until done.

Using a slotted spoon, remove sausage to a bowl leaving the fat in the skillet. You may need to add a couple of tablespoons of butter if you're sausage didn't render enough fat.

Whisk the flour into the fat and cook and stir about 1 minute.

Whisk in the milk and bring to a boil.

Simmer for a couple of minutes then stir in the sausage. 

For the casserole: 

Preheat the oven to 350 degrees and spray a 9x13 inch pan with cooking spray.

Cut biscuits into 1-inch pieces and arrange in the bottom of the prepared pan. The pieces don't need to be toughing. They will expand when cooked.

Sprinkle sausage over the top of the biscuits then scatter cheese on top of sausage.

Whisk eggs and milk together with the salt and pepper and carefully pour over mixture in the pan.

Pour sausage gravy over everything and bake for 45 minutes until eggs and biscuits are cooked through.

Sausage Breakfast Pizza

What a fun pizza! We had this for dinner one night because we LOVE breakfast for dinner. But how fun would this be as a Saturday morning family meal? Mama Mary's Pizza Crusts make this so easy! Since these pizza crusts come 2 to a pack, you can switch up the toppings any which way and make them both. Try some bacon instead of sausage. Throw on some avocado and tomato! There are just so many options. But you really should make this...like now! It's scrumptious!

Sausage Breakfast Pizza



1 Mama Mary's pizza crust ~ any kind
4 eggs
Salt & pepper to taste
3 cups shredded cheese ~ any kind
1 pound breakfast sausage
3 green onions ~ diced
1 red bell pepper ~ diced

Preheat oven to 425 degrees. 

In a medium skillet, brown the sausage until done. Remove from pan.
Whisk the eggs along with a little milk...and salt and pepper...together in a medium bowl. Pour eggs into the pan, add diced green onions and diced bell pepper and scramble until done.

Sprinkle half of the cheese on top of the pizza crust.

Top with cooked sausage, scrambled eggs mixture, and remaining cheese.

Pop in the oven for about 15 minutes until cheese is melted and bubbly.

Remove from the oven and allow to sit for about 5 minutes before slicing.

Breakfast Julius

My mom gave me this recipe years and years ago, before IT Guy and I married. Then I used to make it for my kids when they were little. They loved hearing the blender whirring because that usually meant this treat was on its way. The original recipe called for a raw egg. (Remember this was given to me back in the 70's when people weren't concerned about salmonella.) If you can lay (hahaha!!) your hands on a FRESH raw egg, you can use it in this recipe if you want. I know some people are squeamish about raw eggs. I am one of them. I certainly would never eat a raw egg by itself. But I promise you can't taste it in this recipe! I've changed the raw egg to meringue powder and actually got the same results. The egg white/meringue powder gives this drink a little froth and foam. If you like Orange Julius', then you'll love this!

6 ounces frozen orange juice concentrate
12 ice cubes
1 cup milk
1 cup water
1/2 teaspoon vanilla
1/2 cup sugar
2 teaspoons meringue powder (or for you brave souls, 1 raw egg)
Place all ingredients in a blender and blend until smooth.
Serve immediately.
Makes 6 1-cup servings

Here's something that turned out to be easy and delicious. I'm always on the hunt for breakfast-y type things and this is perfect! As I was describing to IT Guy what was for dinner, I told him what all was in this....his response was..."well...I like all those things...let's eat!" Success!

Skillet Breakfast


4 - 5 potatoes ~ shredded
1 small onion ~ diced
Cheese ~ any kind, as much or as little as you like
4 - 6 fried eggs
Salt and pepper

Saute the onions in a large skillet over medium - medium high heat until tender. Add shredded potatoes and stir.

Add salt and pepper, cover and cook until potatoes are golden brown on one side. Flip over in sections and cook until other side is browned and potatoes are done.

Remove from the heat and add cheese. (I used three different kinds. Swiss, smoked Gouda and cheddar/jack.)

Place skillet in a 375* oven until cheese is melted and bubbly...about 15 minutes. 

Remove skillet from oven and add fried eggs on top. Serve!
