Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Veggie and Kielbasa Fettuccine

I love cooking with kielbasa. Especially when there are veggies involved. I think it flavors the whole dish and let’s face it, sometimes veggies are a little boring. I love them....but every once in a while it’s nice to jazz up the flavor. This turned out really good and is super easy. Change up the veggies you want to use...I used bell peppers and onion...but throwing some mushroom in there would be great or some kind of squash. Super yum!!


Veggie and Kielbasa Fettuccine
 
1 1-pound package kielbasa
2 bell pepper (I used a red and yellow) ~ diced
1 medium onion ~ diced
1 cup chicken broth
1 cup heavy cream
1/2 - 1 teaspoon red pepper flakes
Salt and pepper to taste
8 ounces fettuccine noodles ~ cooked and drained
 
In a large skillet, cook the veggies and kielbasa until the kielbasa has some color and the veggies are tender-crisp....about 5 minutes or so. Add the seasonings and stir.
 
Add the chicken stock and cream.
 
Cook for about 15 minutes to reduce the liquid a bit and heat through.
 
Add the cooked pasta and toss to coat.
 
Serve!

Kielbasa Fried Rice

When I made this, it was one of those times where I had to make a couple of different things for dinner. I was in the mood for Chinese and of course, IT Guy won’t touch it so a quick Mexican food dish was made for him and everyone is happy! Leftovers for both of us! This little dish is really good....really simple to throw together and a fun twist on the regular fried rice. Serve it along side a few fried won tons and you’ve got yourself a fun and delicious dinner! 


Kielbasa Fried Rice
2 - 3 green onions ~ finely chopped
2 eggs ~ beaten
1/2 teaspoon salt
Pepper to taste
2 - 3 tablespoons oil for stir-frying ~ divided use
2 cups cold cooked rice
2 tablespoons soy sauce
1 cup frozen peas and carrots
1 12-ounce package Kielbasa or smoked sausage ~ cut into 1/4” “coins”
Drizzle a little vegetable oil (about 2 tablespoons) into a large skillet. Add the Kielbasa and cook on both sides until the sausage has some color....about 10 minutes or so. Remove sausage to a plate.
Add the eggs to the skillet and scramble the eggs until almost done. Remove eggs to a plate. Wipe skillet clean.
Drizzle a little more oil into the skillet and add the rice. Stir-fry for a few minutes, breaking it apart as it heats. Stir in the soy sauce, salt and pepper.
Stir the kielbasa,green onions, eggs and veggies into the pan with the rice.
Cover and allow to cook over medium heat for about 10 minutes to cook the veggies and heat through.


Here we go!

Remove the eggs from the pan to a plate then stir fry the rice.

Add the soy sauce, salt and pepper and stir.

Add the kielbasa, frozen veggies, scrambled eggs and green onions to the rice. Cover and allow to cook on medium for about 10 minutes to cook the veggies and heat through.

Kielbasa Bacon Bites

I haven't been able to for a couple of years now, but I love having an open house at Christmas. I love inviting our friends over and serving them yummy food. So I'm always looking to see what I can come up with that I haven't done before. These little nuggets of awesomeness are going to make an appearance at my next gathering! These are really simple to make...and you can make a little or a lot! We downed them pretty fast and it's not even Christmas yet!

Kielbasa Bacon Bites




1 package bacon
1 package kielbasa sausage
1/2 cup brown sugar
1 teaspoon cayenne pepper (optional)

Preheat oven to 400 degrees. Spray a rimmed cookie sheet with cooking spray.

Slice kielbasa into 1" pieces...about 24 chunks.

Cut bacon in half.

Combine brown sugar and cayenne pepper (if using) in a shallow bowl and stir to combine.

Wrap a half piece of bacon around each chunk of kielbasa. (You may have a piece or two of bacon left over)

Roll in the brown sugar mixture, making sure all sides are coated.

Secure with a toothpick and set on prepared cookie sheet.

Bake for 20 - 30 minutes or until bacon is slightly crispy and done.

Cool for 5 minutes then arrange on a platter.

Apricot Kielbasa Coins

Kielbasa is a favorite around the SFFS house. So when I had my whole gang together a couple of weeks ago, I threw this in the crock pot to add to our dinner one night. This is the perfect little thing to make for a party. Just combine everything in your slow cooker and basically forget about it for a few hours then serve it up. I love an easy appetizer, don't you?

Apricot Kielbasa Coins



2 pounds Polska Kielbasa
1 1/4 cups Apricot preserves
1/2 cup Dijon mustard

Slice kielbasa into 1/2 inch slices and place in the crock pot.

In a small bowl, combine the apricot preserves and the mustard.

Pour over the kielbasa and stir to coat.

Cook on high for 4 - 5 hours, stirring occasionally.

Serve on a small platter with toothpicks.

Italian Sausage Potato Bake

This dish reminds me of one similar that I make using kielbasa...one of our favorites. I had a big package of Italian sausage links I needed to use and with the potatoes and bell peppers I had on hand, this delicious dish was made. You can use just about any veggies YOU want or stick with these and add what you like. Mushrooms would be great....cherry tomatoes...zucchini...whatever! It's so simple....throw everything in a pan and bake it up!

Italian Sausage Potato Bake



1 pound mini Yukon Gold potatoes
2 bell peppers ~ large diced (I used one yellow and one green)
1 medium onion ~ large diced (I used a yellow one, but a red one would be yummy)
5 or 6 Italian sausage links
Olive oil
Salt and pepper to taste

Preheat oven to 375 degrees. Spray a 9x13 inch pan with cooking spray.

Place diced veggies in the prepared pan.

Drizzle some olive oil, 2 - 3 tablespoons, over veggies then salt and pepper to taste.

Place sausage links on top of veggies and cover with foil.

Bake for 1 hour.

Remove foil and bake another 30 - 45 minutes until sausages begin to brown.

Kielbasa Pepper Rice Skillet

One skillet suppers make me very happy. And when they're as easy as this one is, then I'm even happier. Slice, dice, add, pour, cook...DONE! Not sure what else I can say about this. I really love the way the kielbasa flavors this whole dish. The leftovers are tasty. Just an all-around delicious dinner. There...I guess I CAN think of more to say about it.

Kielbasa Pepper Rice Skillet



1 12-ounce package Kielbasa sausage ~ cut into "coins"
1 medium onion ~ diced
2 cloves garlic ~ minced
1 1/2 cups large diced bell peppers
2 cups beef or chicken stock
1 cup rice
Salt and pepper to taste

In a large skillet, saute the onion and garlic in a little olive oil until soft, about 5 minutes.

Add the sliced kielbasa and cook about 10 minutes.

Add the rice and cook and stir until rice has browned, about 5 minutes.

Add the bell peppers.

Pour in the stock. Stir. Cover then turn temp down to medium and cook about 20 minutes until rice is done.

Honey Chipotle Shrimp & Kielbasa Kabobs

IT Guy just fixed my grill for me...just in time for summer! And to reward him for a job well done, I fixed him a steak. And since I'd rather have shrimp than steak, I decided to make me some kabobs! I threw some kielbasa in for good measure...then spiced things up a little bit with some chipotle barbeque sauce. These were SO good! And SO simple! They only took a matter of minutes to cook since shrimp only take a matter of minutes to cook. Funny how that worked out, huh? Kielbasa is fully cooked...just needs to be browned. So next time you've got your grill fired up, think about these! They're yummy!

Honey Chipotle Shrimp

1 pound large shrimp ~ cleaned and deveined
1 pound kielbasa sausage
1 green bell pepper ~ chunked
1 medium red onion ~ large dice
1 cup chipotle barbeque sauce ~ recipe follows

Soak bamboo skewers in water for about 10 minutes.

Thread ingredients onto skewers.

Season with salt & pepper if deisred.

Brush lightly with BBQ sauce.

Grill over medium flame until shrimp are cooked...about 3 minutes per side. 

Brush with BBQ sauce a few times while grilling then once more after you take them off.


Honey Chipotle BBQ Sauce
1/2 cup ketchup
1/4 cup brown sugar
1/4 cup honey
1 1/2 tablespoons chipotle peppers in adobo sauce
2 teaspoons apple cider vinegar
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon garlic powder
1/4 teaspoon salt, or to taste

Place all ingredients in a food processor and combine until smooth. (You probably won't use all of this. Store unused sauce in the fridge.)


Okay....here's the stuff for the kabobs. Just dice the green pepper and the onion and cut the kielbasa into large chunks.

Then brush the kabobs with some of the sauce. I poured some of the sauce into a separate bowl since I was working with raw seafood and didn't want to contaminate ALL of the sauce. Place unused sauce in a covered container in your fridge.
