This recipe
came from my mom YEARS ago. I think she was making this recipe before I
was even married so of course it went right into the recipe file of
simple things to cook for my husband. Being a new bride, I wasn't the
best cook in the world and "came into my own" years later when I
discovered how fun cooking can be. But...I digress. This bar cookie
recipe is so easy and SO good. The last pan I made disappeared in no
time flat. It would be great served with a dollop of sweetened whipped
cream or a scoop of vanilla ice cream. Plain is good too. Oh, so good.
Brown Sugar Chewies
Preheat oven to 350 degrees
Line 1 rimmed 12x15 inch cookie sheet with parchment paper
4 eggs – beaten
2 ¼ cups brown sugar
2 cups flour
1 cup chopped pecans
1 teaspoon vanilla
1 teaspoon cinnamon
Dash salt
Beat the eggs and brown sugar together until creamy. Add the vanilla. Stir in the flour, cinnamon and salt. Add chopped nuts.
Pour batter into prepared baking pan. Bake for about 20 minutes. Glaze.
Glaze:
2 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla
Mix all together and pour over warm cookies. Let icing cool and harden then cut into bars.
Makes about 24 bars.
