Remember the recipe for the Chicken Enchilada Soup I posted a
week or so ago? I've had several people tell me that they've made it and
thought it was delicious! Great minds think alike, as they say, because
we thought it was, too!! Well...these little fritters are what I served
with the soup. Remember how I said IT Guy's eyes rolled back in his
head when he ate the soup?? Well, I thought his eyes were going to roll
right OUT of his head when he tasted these babies. Oh my...so stinkin'
good! So the next time you make something Mexican-y...make these to go
along with whatever it is! Or make the Chicken Enchilada Soup if you
haven't. I promise your life will never be the same. Here's where you can find the recipe for the Chicken Enchilada Soup.
Green Chile Corn Fritters
2 cups Bisquick Baking Mix
½ cup water
1 egg
1 7-ounce can diced green chiles
1 15-ounce can whole kernel corn – drained
1 cup grated cheddar-jack cheese
Combine Bisquick, water and egg. Add green chiles, corn and cheese and stir until combined.
In
a medium pan, heat oil over medium heat. Drop fritters by small
scoop-full, flattening them a little, and fry on both sides until
golden brown and done in the centers.
Drain on paper towels and salt lightly.
Makes about 24 fritters
