Green Chile Corn Fritters

2 cups Bisquick Baking Mix
½ cup water
1 egg
1 7-ounce can diced green chiles
1 15-ounce can whole kernel corn – drained
1 cup grated cheddar-jack cheese
Combine Bisquick, water and egg. Add green chiles, corn and cheese and stir until combined.
In a medium pan, heat oil over medium heat. Drop fritters by small scoop-full, flattening them a little, and fry on both sides until golden brown and done in the centers.
Drain on paper towels and salt lightly.
Makes about 24 fritters

The ingredients.

Mix the Bisquick, egg and water in a large bowl.

Then add the green chiles, corn and cheese.

Get your oil nice and hot then drop
by scoopfuls into the oil. Drain on paper towels.

Salt lightly while still hot. Delish!!
