I love a good onion ring. So does #1 son. He's loved them since he was a little tiny boy and used to call them earrings. So when I looked in my pantry and spied an onion sitting next to the Panko bread crumbs, I knew there was something wonderful about to happen. These are every bit as good as what you can get in a restaurant and are even delicious leftover. I threw them on a cookie sheet and popped them into a 350 degree oven for about 10 minutes and they were just as good as they had been fresh out of the fryer!
Onion Rings

2 large onions
milk
1 cup flour
1/2 cup bread crumbs
1/2 cup panko bread crumbs
2 eggs
salt and pepper to taste
Oil for frying
Slice onions 3/4 inch thick and place in a bowl. Cover with milk and set aside.
Place flour in a shallow bowl and season with salt and pepper.
Combine both bread crumbs in a separate shallow bowl and season with salt and pepper.
Beat eggs in a small bowl.
Dredge onions rings in flour then egg then bread crumbs.
Fry in a large skillet until golden brown on both sides.
Drain on paper towels and keep in a warm oven.

...oops...and the eggs.
You kinda need these.

Slice the onions in 3/4 inch slices,
put them in a bowl and pour the milk over the slices.

Meanwhile, assemble the other things.

Dredge the slices in the flour,
then the egg then the panko.

Then fry!

Then eat!!!
