Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Taco Stroganoff

This little dish makes the perfect family meal. You can throw just about anything taco related into this and still make the fam happy. I’m not much of a black bean kinda gal so I used corn. Use ground chicken or turkey if you want. Don’t forget to put the salsa and guacamole on the table for those who want it. This is super yummy!



Taco Stroganoff
1 pound ground beef
1 medium onion ~ diced
1 package taco seasoning
1/2 cup water
1 14-ounce can corn or black beans ~ drained
1 8-ounce container sour cream
1 cup grated cheddar cheese
8 ounces egg noodles ~ cooked and drained
Salt and pepper to taste
In a large skillet, saute the onion for about 5 minutes.
Add the ground beef and cook through.
Add the taco mix, water, salt, pepper, sour cream, corn (or beans) and cheese to the meat mixture. Stir well.
Gently stir in the cooked noodles.
Cover and simmer until heated through.



Here's the grub!




Saute the onion for a bit.




Add the ground beef and cook until done.




Then add the sour cream, taco mix, water, drained corn (or beans), and the grated cheese. Salt and pepper, too!




Stir to combine then add the cooked pasta. Gently stir to combine then simmer for a few minutes to heat through.




Dig in!
