Ham Casserole

2 cups peeled and cubed potatoes
2 stalks celery ~ diced
1 cup diced carrots
3 tablespoons butter
1 16-ounce package ham steaks ~ diced (about 2 cups diced ham)
1 small green bell pepper ~ diced
1 small onion ~ diced
1/4 cup butter
3 tablespoons flour
1 cup whole milk
Salt & pepper to taste
1 cup grated Cheddar cheese
1/2 cup Panko crumbs
2 tablespoons butter ~ melted
Preheat oven to 350 degrees. Grease a 9x13 inch baking pan.
Place potatoes, celery, and carrot in a large pot and add enough water to cover. Bring
to a boil then reduce heat to medium and simmer until tender, about 20
minutes.
Drain and transfer to a large bowl.
Melt the 3 tablespoons butter in a large skillet over medium heat. Add
ham, green bell pepper, and onion and cook until vegetables are tender, about 5
minutes.
Pour mixture into the large bowl with the potatoes.
Melt 1/4 cup butter in a small saucepan. Whisk flour into the
melted butter until smooth and cook about 1 minute.
Gradually stir in milk and season with salt and pepper.
Bring to a boil, stirring constantly, until thickened, about 2 minutes.
Add Cheddar cheese and stir until melted.
Pour cheese mixture over ham and potatoes in the bowl and stir to combine. Pour into the casserole dish.
Combine the 2 tablespoons melted butter with the Panko crumbs. Sprinkle over casserole.
Bake in preheated oven until bubbly, 25 to 30 minutes.
Allow casserole to rest for 5 to 10 minutes before serving.

Dice the potatoes, celery and
carrots and boil until tender.

In a skillet, cook the ham, onion and
green bell pepper in a little butter until tender.

Melt
1/4 cup butter in a small saucepan
and add 3 tablespoons of flour. Cook
for
about a minute then add 1 cup of milk and
salt & pepper. Cook
until thick.

Then add 1 cup of shredded
cheese and stir to melt cheese.

Combine the ham mixture, the potato mixture
and the cheese sauce in a large bowl and mix well.

Melt 2 tablespoons of butter in a
small bowl in the microwave then
add 1/2 cup of Panko bread crumbs.
Stir to combine.

Pour casserole mixture into a prepared
pan and sprinkle with Panko mixture.

Bake it up!
