Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. S'mores Squares

Making cookies and s'mores has never been easier! Or better! This combo is one that can't be beat. They're super good if you add a big ole' scoop of vanilla ice cream on top because it makes it extra good!!! (Not that I would know this from personal experience or anything.)

S'mores Squares



2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup butter ~ melted
1 cup butter ~ softened
3/4 cup sugar
3/4 cup packed brown sugar
1 teaspoon vanilla
2 eggs
2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 cup chocolate chips
1 cup mini marshmallows
2 sheets graham crackers ~ broken into large bite sized pieces
1 8-ounce chocolate bar ~ broken into large bite sized pieces

Preheat oven to 350 degrees. Spray a 9x13 inch baking pan with cooking spray.

In a medium bowl, combine the graham cracker crumbs, 1/4 cup sugar and 1/2 cup melted butter. Mix to combine then press into the prepared pan. Place in the freezer while making cookie mixture.

In a large mixing bowl, combine the 1 cup of softened butter, brown sugar, 3/4 cup sugar and the vanilla. Beat on medium speed until fluffy.

Add the eggs and beat well.

Add the flour, salt and baking soda. Pulse mixer slowly to combine then mix well.

Stir in the chocolate chips and the mini marshmallows.

Remove graham cracker crust from the freezer and place large dollops of the cookie batter on top. Press down to cover crust with batter.

Randomly press broken crackers and chocolate into batter.

Bake for 35 - 40 minutes.

Allow to cool completely before slicing.

Rocky Road Dessert Pizza

Are you looking for an easy back to school treat? Something for the kiddies to munch on when they walk in the door after all that book-learnin'? Well, here you go! This little goodie is so easy and so good. It takes all of 15 minutes to assemble and bake thanks to Mama Mary's Gourmet Pizza Crust. This makes mom happy because it's so easy and it makes the kids happy because it's delicious! Win/win!!!

Rocky Road Dessert Pizza



1 thin crust Mama Mary's pizza crust
1/2 cup chocolate spread (Hershey brand, found in the peanut butter aisle)
1/2 cups chocolate chips
1/2 cup rough chopped nuts (I used pecans)
1 cup mini marshmallows
2 tablespoons chocolate spread

Preheat oven to 425 degrees.

Spread crust with 1/2 cup chocolate spread.

Sprinkle with nuts, chocolate chips and marshmallows.

Bake for 12 minutes until marshmallows are puffed and golden brown.

Melt 2 tablespoons chocolate spread in the microwave and drizzle over cooked pizza.

Here's all you need!

Nutella S'mores Pizza with Cookie Butter Drizzle...and a $1.00 off COUPON!!!

Holy smokes!!!! This dessert pizza is out of this world!!! Never underestimate the power of Nutella and cookie butter because the combo will have you begging for mercy! This was incredible! I used my trusty Mama Mary's thin crust for this but you could use any of their fantastic crusts and this would still be delicious!!! It so quick to throw together, too. If your family does a "pizza night", consider adding this to the menu for dessert. I promise you won't be disappointed!

Nutella S'mores Pizza 
with Cookie Butter Drizzle



1 Mama Mary's pizza crust ~ any kind
1 cup Nutella spread (found in the peanut butter section)
2 cups mini marshmallows
1/2 cup chocolate chips
2 graham crackers ~ broken into small pieces
1/2 cup cookie butter (I used Biscoff, found in the peanut butter section)

Preheat oven to 350 degrees.

Spread the Nutella all over the pizza crust.

Sprinkle with marshmallows, chocolate chips and graham crackers.

In a small bowl, heat the cookie butter in the microwave for about 15 - 20 seconds until very soft. Stir.

Drizzle cookie butter over the pizza.

Place pizza in the oven and allow to cook for about 10 minutes or until marshmallows begin to puff and turn golden brown.

Allow pizza to rest for about 5 minutes before slicing.

Fluffernutter Rice Krispie Treats

Rice Krispie Treats a wonderful! I could eat them by the pan full. I don't....but then again....maybe I do! (You'll never know...but if you guessed I DO...then you'd be right.) I also love fluffernutter sandwiches. You know those totally unhealthy, NOT nutritional sandwiches made with peanut butter and marshmallow fluff? Yeah. Those. So I figured why not go all out and combine the two! These turned out fab-u-low-so!!!! Again...I could eat the entire pan. And probably will.

Fluffernutter Rice Krispie Treats



1/2 stick butter (1/4 cup)
1 10-ounce bag marshmallows (any size)
2 cups mini marshmallows
8 cups Rice Krispies cereal
3 - 4 2.5-ounce bags of Mini Reese's Peanut Butter cups (about 2 cups)
1 cup peanut butter baking chips

Heat oven to 350 degrees, then turn it off. Spray a 9x13 inch pan with cooking spray.

Melt the butter in the microwave in a large microwave safe bowl.

Stir in the 10-ounce bag of marshmallows.

Microwave for 1 minute. Stir.

Microwave for another 30 seconds and stir to smooth.

Pour in the cereal and stir to combine.

Pour in the 2 cups of mini-marshmallows and stir.

Press mixture into the prepared pan with greased hands. (I spray cooking spray on my hands.)

Sprinkle the top with the peanut butter chips.

Place in the warm oven for about 10 minutes until the baking chips are soft and can be spread like frosting.

Sprinkle peanut butter cups over the top of the melted baking chips, distributing evenly and pressing the cups down gently onto the top of the RKT.

Allow to cool and firm.

Cut into squares.

 What Christmas would be complete without Corn Flake wreaths? Being a big Rice Krispie Treat fan, to me...the wreaths are always a treat. Even if they DO leave my tongue green. This is a great project to do with kids. You know how kids are...the messier and more colorful, the better. Now...I have to admit, I've never made these before but I've seen them around for years. A good friend shared with me her recipe so I'm here to share it with you. If you've never made these, then get on the stick....they're yummy! An old fashioned holiday favorite!

Corn Flake Holiday Wreaths



1/2 cup butter
48 large marshmallows
3/4 teaspoon Vanilla
3/4 teaspoon almond extract ~ optional
1 1/2 teaspoons green food coloring
6 cups corn flakes
Green sugar sprinkles ~ optional
Red Hots

In a large microwave safe bowl, melt butter in the microwave.

Add marshmallows and toss to coat.

Microwave for 1 minute. Stir.

Microwave for another minute.

Stir until marshmallows are melted.

Add vanilla, extracts food coloring

Pour over Corn Flakes and stir

Shape into wreaths with buttered fingers  (or spray your hands with cooking spray.)       

Sprinkle with green sugar sprinkles

Add Red Hots for Berries



Here's the goods.


Melt the butter then add the marshmallows.


Melt the marshmallows then add 
the extracts and the food coloring. Stir.


Then add the corn flakes.


Stir until coated then scoop out by
 the spoonfuls and shape into wreaths. 
Sprinkle with the green sugar. 
Then add the red hots.


I found the easiest way to make 
a wreath was to form a circle then 
punch out the middle with a large 
cake decorating tip.

I've got a friend on FB who likes to post pictures of his food. He's a young bachelor, a GREAT photographer and likes to eat....so it makes sense that he would take pictures of what he's eating. The other day he posted a picture of s'mores pizza. I got him to tell me what was on it and decided right then and there I would make one here at home. Here's my version of Zach's dessert.

S'Mores Pizza



Pizza dough ~ store bought or homemade
1 cup chocolate ice cream topping
1 cup mini chocolate chips
2 cups mini marshmallows
1/2 cup graham cracker crumbs

Preheat oven to temperature indicated for pizza dough.

Spread pizza crust onto pizza pan.

Prebake crust about 10 minutes. 

Remove pizza from oven and spread with chocolate topping.

Sprinkle with graham cracker crumbs.

Sprinkle with mini chocolate chips.

Cook pizza another 5 minutes.

Remove pizza from oven and turn oven to broil.

Sprinkle with mini marshmallows.

Place pizza back in the oven and broil until marshmallows are golden...just a few seconds.

Remove from the oven and allow to sit for a couple of minutes. Slice and serve!

Here's what I used for this yummy treat.

Spread your pizza crust on your pizza pan. 
Excuse my wonky crust. 
Tried to make a circle out of a square. 
Not too successful.

Back the crust for about 10 minutes.

The spread the chocolate sauce on. 
Then sprinkle on the graham 
crackers crumbs and chocolate chips. 
Pop it back in the oven for a few minutes.

Sprinkle on the marshmallows...

and broil for a few SECONDS 
until the marshmallows are lightly golden.

Slice and serve!!

Almond Joy Cake

I have to admit I don't know where I got this recipe. I had it in my file..handwritten by me with no notes. After I made it, my folks came over and before they left I asked if they wanted a hunk of cake to take home. When my dad heard what kind of cake it was...he asked my mom..."is this the cake Gayle makes?"..to which she replied..."yes, it is." My dad was very excited as this is a favorite of his. So I'm going to assume this cake was from my mom's friend, Gayle. Thanks, Gayle!

Almond Joy Cake



1 Devil's Food Cake mix - mixed and baked according to box directions.

After cake is done, remove from the oven and poke holes all over the cake with a fork.

1 12-ounce can EVAPORATED milk, divided use
12 ounce package coconut
2 1/2 cups sugar, divided use
24 large marshmallows
1 12-ounce package chocolate chips
1/2 cup butter
1 4-ounce package slivered almonds

In a medium saucepan, combine 1 cup of the evaporated milk and the 1/2 cup sugar. Heat over medium heat until mixture begins to boil. Turn heat down to simmer. Add marshmallows and coconut and cook and stir until marshmallows are melted. Pour over pierced cake. Set aside so coconut mixture can absorb into cake.

In a medium saucepan, combine remaining sugar and remaining evaporated milk. Cook over medium heat until sugar is dissolved. Add chocolate chips and stir until chocolate is melted. Add butter and stir until butter is melted then spread over cake. Add almonds and stir. Frost cake.

Chill until ready to serve.
