Glazed and Grilled Ham Steaks

This was so easy...it's almost embarrassing. When I find something that feeds two or three people, I am all over it. As you can imagine, there's a lot of food cooked here and if I can do without leftovers a couple of nights a week, that means my fridge can breathe a little bit. I had two small ham steaks in my freezer and some apricot preserves in my fridge that were calling to be used with the ham. Below is the result....and IT Guy proclaimed it delicious!


Grilled & Glazed Ham Steaks



2 tablespoons apricot preserves
2 teaspoons prepared mustard (I used Dijon)
1/2 teaspoon lemon juice
dash ground cinnamon
1 (1 pound) 1 inch thick ham steak

Combine preserves, mustard, lemon juice and cinnamon in a small bowl. Set glaze aside. Score one side of each ham steak. Grill, uncovered, over medium heat for 5 - 7  minutes on each side, brushing with glaze during the last few minutes of grilling.

Serves 2 - 3

Brush the scored side with the sauce mixture and plop it on your grill or in your grill pan. Let it cook for a few minutes.

Flip it over and do the other side. I made sure the glaze was good and caramelized on each side. I think I turned each piece at least 4 times. Pretty and yummy and also pretty yummy.

 Remember the cinnamon chip debacle from a couple of months back? Remember how I went from store to store to store to try and find these little suckers? I finally  found them and when I did I made sure I got enough to last me the whole year. So I decided it was time to use of one of my little prized packages to make cinnamon scones. Can I tell you what a good decision that was? I think I just did.

Cinnamon Chip Scones 
with Cinnamon Glaze



2 cups flour
4 teaspoons baking powder
3/4 teaspoon salt
1/3 cup sugar
4 tablespoons butter
2 tablespoons shortening
3/4 cup half & half (or heavy cream)
1 egg
1 bag cinnamon chips ~ divided use


Heat oven to 375 degrees.

In a large mixing bowl, combine flour, baking powder, salt and sugar. Mix well.

Cut in butter and shortening until mixture resembles coarse crumbs.

In a separate bowl, combine cream with beaten egg then add to dry ingredients. 

Stir in 1 cup cinnamon chips.

Turn dough out onto a floured surface. Pat dough out to ½” thickness and cut into desired shape.

Place on cookie sheet lined with parchment paper. 

Bake for 15 minutes or until lightly browned. 

Makes 10 - 12 scones.

Measure the flour, sugar, salt 
and baking powder into a bowl.


Add the butter and shortening then cut in.


Then add the beaten egg and 
half & half that's been mixed together.


Stir in the remaining cinnamon chips.


Turn dough out onto a floured surface.


Pat to 1/2 inch thick.


Then cut into desired shape.


Bake until golden brown. Allow to cool.



Cinnamon Glaze

Remaining bag of cinnamon chips ~ about 3/4 cup
3 cups powdered sugar
Milk

In a heat proof bowl, microwave cinnamon chips for 1 minute. Stir to smooth.

Add a couple of tablespoons to thin.

Add 1 cup of powdered sugar. Stir.

Add a couple more tablespoons of milk and stir.

Repeat with remaining powdered sugar and enough milk to make a smooth glaze.

Drizzle or drip over scones.


For the glaze.


Melt the cinnamon chips then add a little milk.


Stir in some of the powdered sugar. 
Repeat until all the powdered sugar has been used.


You want your glaze to look like this!


Because THIS is what you're going to do with it!!

I really enjoy bacon dipped in maple syrup. There's just something about that combination that appeals to me. If I ever get to Voo-Doo Doughnuts in Oregon, I'm going to order me a maple bar with bacon on top. and I don't even LIKE maple bars. So I figured how wrong could I be to add maple syrup to pork chops in some way. Big hit! IT Guy loved them and I thought they were the bomb.com!

Maple Glazed Pork Chops



1 tablespoon vegetable oil
4 loin pork chops
salt and pepper
1/3 cup pure maple syrup
1/3 cup chicken broth
2 tablespoons Dijon mustard
2 teaspoons balsamic vinegar

In a large skillet, heat vegetable oil over medium-high heat. Sprinkle chops with salt and pepper; add chops to the hot oil in skillet.

Cook chops for about 2 minutes on each side, or until nicely browned.

Whisk together remaining ingredients and add to the skillet. Reduce heat to medium-low, cover, and simmer for 10 minutes.

Remove cover and simmer for about 20 minutes longer, or until liquids are reduced and chops are glazed.

Serves 3 - 4.

And the salt and pepper. Yikes....but here's the stuff for the glaze. 
I was in a hurry.


 
Combine the maple syrup, the balsamic, 
mustard and chicken broth. Mix it well.


 
Start browning your chops in the oil.


 
Then pour the sauce over the chops. 
Cook covered for about 10 minutes 
then uncovered for 20 until the sauce has reduced.


 
Mmmmm....mmmm!!!

The very first time I made this, I was holding a Christmas open house. I had set the table with all sorts of delectable foods and gave this ham center stage! It was SO good. I love anything with a sweet & savory flavor to it and this glaze is just perfect! And easy? Oh yeah...definitely easy. The only thing you need to do to it, is baste it as it cooks. But SO worth it!

Orange Glazed Ham



1 (3-4 pound) cooked or uncooked ham.

¼ cup prepared mustard
5 tablespoons orange juice
1 cup brown sugar - packed

Preheat oven to 400 degrees.

Score ham and place on a rack in a foil lined roasting pan. Insert meat thermometer into the thickest part of the ham.

Combine mustard, orange juice and brown sugar in a medium sized bowl. Pour over ham.

Place ham in 400 degree oven for 30 minutes. Glaze.

Turn oven temperature to 325 and cook according to ham directions, for cooked or uncooked. Glaze ham every 20 minutes until done. If you find that your ham is not giving off enough liquid to make a glaze, add ½ cup of water the first couple of times you glaze. Just pour the water in the roasting pan and give a little stir then glaze as usual.


 
This is what you'll need for this yummy glaze.


 
Combine the orange juice, mustard and brown sugar.


 
Then pour it over the scored ham. 
Use a rack so the ham doesn't sit 
on the bottom of the pan and burn.


 
Glaze every 20 minutes until done. 
After all the glazing the ham will 
have almost a candy coating all over it. 
You might want to add some water as it cooks. 
Just stir the water into the roasting pan and keep glazing!
