Welcome!
Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. But...mostly this will be a place for food. I hope you'll see something you like and if you decide to try something from the list...leave me a comment and let me know!

Smooth Caramel Sauce
Caramel sauce is very easy to make. It takes about 10 - 15 minutes. You have to babysit it the whole time so make sure you have all your ingredients ready to go when you start. The little bit of effort it takes to make this is SO worth it. This sauce is WAY better than anything you can buy....and it doesn't have all those mysterious ingredients that store bought would have. Serve this over ice cream....cakes...we dipped Granny Smith apples in it! Yummers!
Smooth Caramel Sauce
1 cup granulated sugar
6 tablespoons butter
1/2 cup heavy cream
Pour the sugar into a 2 or 3 quart heavy bottomed sauce pan. Set over medium-hi heat.
Stir with a wooden spoon until sugar melts and turns a caramel color.
Remove from heat and add butter. Return to the heat and whisk until butter melts.
Slowly pour in the cream, whisking the whole time. Stir and cook until caramel thickens.
Remove from heat and allow to cool before pouring into a jar.
Makes about 1 1/4 cups caramel.
Skillet Ham Salad
This recipe came from my sister-in-law but she got it from a mutual friend. My brother was actually the one who mentioned it to me and said how much he enjoyed it and that I should feature it on SFFS. You know....sometimes brothers are pretty smart because this was very good! It can easily be doubled for more but it fed 4 people with some leftover. Really tasty and easy!
Skillet Ham Salad
1/4 cup chopped green onions
1/4 cup chopped green peppers
3 cups diced cooked ham (I used a ham steak)
1 tablespoon butter
4 cups diced cooked potatoes
1/4 teaspoon salt
dash pepper
1 1/2 cups grated cheese
Cook onions, peppers and ham until meat is warmed through and veggies are tender/crisp.
Add cooked potatoes, salt and pepper. Heat through, mixing gently.
Add cheese and heat until cheese is melted. Stirring gently.
