Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Skillet Ham Salad
This recipe came from my sister-in-law but she got it from a mutual friend. My brother was actually the one who mentioned it to me and said how much he enjoyed it and that I should feature it on SFFS. You know....sometimes brothers are pretty smart because this was very good! It can easily be doubled for more but it fed 4 people with some leftover. Really tasty and easy!
Skillet Ham Salad
1/4 cup chopped green onions
1/4 cup chopped green peppers
3 cups diced cooked ham (I used a ham steak)
1 tablespoon butter
4 cups diced cooked potatoes
1/4 teaspoon salt
dash pepper
1 1/2 cups grated cheese
Cook onions, peppers and ham until meat is warmed through and veggies are tender/crisp.
Add cooked potatoes, salt and pepper. Heat through, mixing gently.
Add cheese and heat until cheese is melted. Stirring gently.
