This casserole is a winner! It's so easy to whip up and can be used
for breakfast or dinner! You can make it with the amounts listed or
double it for a larger amount. Serve it with a yummy fruit salad and
you've got yourself a great meal!
Broccoli Ham & Cheddar Casserole
3 cups broccoli florets ~ blanched
2 cups ham ~ cut into bite sized chunks
3 - 4 green onions ~ chopped
1 cup shredded cheese (I used Colby-Jack)
salt and pepper to taste
6 eggs
Spray a 9-inch square baking dish with cooking spray. Preheat oven to 375 degrees.
Spread blanched broccoli in the bottom of the prepared pan then scatter ham on top.
Sprinkle cheese on top of the ham then the diced onions.
In a medium sized bowl, beat the eggs with some salt and pepper then pour the eggs over the mixture in the pan.
Cover
with foil and bake for 20 minutes. Remove foil and bake another 20
minutes until cheese is melted and mixture has started to brown in
places.
Can be doubled.
