Toffee Chip Pecan Sugar Cookies

Sugar cookies are one of my favorite kind of cookies. They’re soft and sweet, but not TOO sweet and delicate. Yum! Also....toffee is like one of my bff’s. Love it. I prefer it without chocolate but I’ll eat that too. So adding toffee chips to my favorite sugar cookie recipe just made good sense and adding pecans because well...pecans. Yummy cookies, guys!



Toffee Chip Pecan Sugar Cookies
1/2 cup sugar
1/2 cup powdered sugar
1/2 cup butter
1/2 cup shortening
1 egg
2 cups flour
1 teaspoon baking soda
1 teaspoon cream of tarter
1 teaspoon vanilla
1 cup toffee chips
1/2 cup chopped pecans
1/2 cup sugar ~ for rolling cookies
Place parchment paper on cookie pans. Preheat oven to 350 degrees. 
Cream sugars with butter and shortening. 
Add egg and vanilla and mix well. 
Add dry ingredients and mix well. 
Stir in the toffee chips and chopped pecans. 
Scoop into 1 inch balls and roll in 1/2 cup sugar. 
Place on prepared pan and flatten dough balls a little bit with your hand. 
Bake for about 10 minutes.
Allow to cool about 10 minutes then remove to a cooling rack. 
Makes about 2 - 3 dozen

Then add the egg and vanilla.




Next, the dry ingredients.




Add the pecans and toffee chips.




Roll into balls then into the 1/2 cup sugar.




Flatten a bit then bake!




Don't forget the milk!

Salted Caramel Sugar Cookies

Oh my...you guys! These are SO good! I'm telling you! So. Good. Sugar cookies are one of my favorites and also caramel and also salted caramel so tweaking my recipe a little tiny bit made for a great little cookie! They are so tender but the caramel bits inside make them so yummy!! As soon as we polished off this batch, IT Guy asked when we'd (and by WE he meant ME) be making these again. You definitely want to put these on your "to make" list for the holidays.

Salted Caramel Sugar Cookies




1/2 cup sugar1/2 cup powdered sugar
1/2 cup butter
1/2 cup shortening
1 egg
2 cups flour
1 teaspoon baking soda
1 teaspoon cream of tarter
1 teaspoon vanilla
1 10-ounce bag caramel bits (found in the baking aisle next to the chocolate chips)

Place parchment paper on cookie pans. Preheat oven to 350 degrees.

Cream sugars with butter and shortening.

Add the egg and mix well.

Add dry ingredients and mix well then add the vanilla.

Gently mix in caramel bits.

Scoop into 1 inch balls and place on prepared pan.

Flatten dough balls and sprinkle with a little sugar.

Bake for about 10 minutes.

Allow cookies to cool on cookies sheets for a few minutes before moving to a cooling rack.

Makes about 2 - 3 dozen

Cinnamon Sugar Biscuits

Aren't biscuits just about the perfect food? We love them here in the SFFS house. Breakfast, lunch or dinner....we are fans. They're also great for dessert or as a little sweet treat. Try these fun biscuits with some apple butter! They're not as hard to make as you might think!

Cinnamon Sugar Biscuits



1/4 cup sugar ~ divided use
2 teaspoons cinnamon
2 cups flour
3 teaspoons baking powder
1 teaspoon salt
6 tablespoons COLD butter ~ cut into small cubes
1 cup milk
2 tablespoons butter ~ melted

Preheat oven to 450 degrees. Lightly grease a cookie sheet.

In a small bowl, measure out 3 tablespoons of the sugar. Combine with the cinnamon. Set aside.

In a medium bowl, combine the flour, baking powder, salt and remaining sugar.

Cut the 6 tablespoons of cold butter into the flour mixture with a pastry cutter until mixture resembles peas.

Pour in the milk and stir until just combined.

Turn dough out onto a lightly floured surface and pat gently into an 8-inch circle.

Sprinkle with half of the cinnamon/sugar mixture then fold dough in half and press down gently to make the dough a little bigger.

Cut with a 2-inch biscuit cutter and place on prepared greased cookie sheet.

Brush biscuits with melted butter then sprinkle with the remaining cinnamon/sugar mixture.

Bake biscuits for about 15 minutes or until done.

Serve with apple butter or jam.

Makes about 8 biscuits.

Key Lime Coconut Sugar Cookies

I can't tell you how yummy these cookies are. Light and airy and tender. The hint of lime makes them taste so fresh and the coconut just adds to the fun. This is a super easy sugar cookie recipe with no chilling and no rolling. Just scoop and bake. They'd be perfect for a cookie exchange but wrap them carefully as they are delicate!

Key Lime Coconut Sugar Cookies



1/2 cup sugar
1/2 cup powdered sugar
1/2 cup butter
1/2 cup shortening
1 egg
1/2 teaspoon coconut extract
Zest from 2 limes (Key Limes or regular limes)
Juice from 2 limes ~ about 2 tablespoons
2 cups flour plus 2 tablespoons
1 teaspoon baking soda
1 teaspoon cream of tarter
1 cup sweetened flake coconut
1 teaspoon vanilla
Sugar for sprinkling

Place parchment paper on cookie pans. Preheat oven to 350 degrees.

Cream sugars with butter and shortening.

Add egg, coconut extract and vanilla and mix well. 

Add lime juice and lime zest.

Add flour, baking soda, cream of tarter and coconut and mix well.

Scoop into 1 inch balls and place on prepared pan.

Flatten dough balls with your hand or the bottom of a glass then sprinkle with sugar.

Bake for about 10 minutes.

White Chocolate Peppermint Sugar Cookies

I love mint and chocolate. Andes mints...mint chocolate chip ice cream...great combo, I think. So I decided to take my standard drop sugar cookie and add white chocolate and peppermint to the recipe. Yep...it was a winner. IT Guy SAID he didn't really care for the chocolate/mint combo but these cookies went pretty quick and I know I wasn't eating them! He admitted that the flavor "grew on him"....haha. I KNEW I could win him over!!

White Chocolate Peppermint 
Sugar Cookies


 

1/2 cup sugar
1/2 cup powdered sugar
1/2 cup butter
1/2 cup shortening
1 egg
2 cups flour
1 teaspoon baking soda
1 teaspoon cream of tarter
1 teaspoon vanilla
1 1/2 cups white chocolate chips ~ divided use
1 1/2 cups crushed candy canes ~ divided use


Cream sugars with butter and shortening.

Add egg and vanilla and mix well.

Add dry ingredients and mix well.

Stir in 1 cup white chocolate chips and 1 cup crushed candy canes.

Scoop into 1 inch balls and place on prepared pan.

Flatten dough balls and bake for about 10 minutes.

Melt remaining 1/2 cup white chocolate. Add remaining 1/2 cup crushed candy canes.

Drizzle on cooled cookies.

Pink Lemonade Sugar Cookies

I've had the idea for these little cookies in my head for a while so I figured it was time to put them in my mouth. These turned out so good. A little bit of pink lemonade concentrate transforms these basic sugar cookies into a tart and sweet treat! I loved the sparkling sugar crystals on top of the light pink frosting, too!


Pink Lemonade Sugar Cookies




1 cup butter
1 cup sugar
2 eggs
3 cups flour
1 teaspoon baking soda
1/2 cup frozen pink lemonade concentrate, thawed


Preheat oven to 375 degrees. Prepare 2 baking sheets with parchment paper or cooking spray.

In a large bowl, cream together the butter and sugar.

Add eggs, one at a time.

Add 1 cup of the flour and the baking soda to the butter mixture. Mix to combine.

Add half of the lemonade concentrate.

Gradually beat in another cup of flour, the remaining lemonade concentrate, then the last of the flour.

Drop mixture by cookie scoopfuls onto the prepared cookie sheet. (I used my 1 1/2 inch scoop)

Bake 8 to 10 minutes until lightly brown.

Cool. Frost with Pink Lemonade Frosting

1/4 cup (approx.) frozen pink lemonade concentrate, thawed
3 cups powdered sugar
3 tablespoons softened butter
Sugar (Or sparkling sugar crystals. I found them in the cookie aisle at the grocery store.)

Combine powdered sugar and butter in a medium bowl. Mix until combined. Add enough lemonade concentrate until spreading consistency is reached. Frost cooled cookies. Then dip frosted cookies in sugar.

Makes about 3 dozen cookies.
