We love pizza around our house so when I found this recipe I knew it
would be a hit! And I was right! It's so easy to prepare and doesn't
make a HUGE amount but is easily doubled if you need to feed a bigger
crowd. You can change things up if you don't like pepperoni. Use sausage
instead of ground beef. Add cheddar cheese along with the mozzarella.
If you like it a little hotter, add some red pepper flakes. Olives!!
Don't forget olives!! So many options! I think young kids would LOVE
this....I know my three-year old granddaughter LOVED it...but it suits
grown-ups, too. An easy family dinner sure to please everyone!
Pizza Casserole
2 cups uncooked egg noodles - any cut (I used bow-tie)
1/2 pound ground beef
1 onion - chopped
2 tablespoon olive oil
2 cloves garlic
1 green bell pepper - chopped
1 cup pepperoni slices - cut in half
16 oz pizza sauce - I was out and used Marinara sauce..worked great
4 tablespoons milk
1 cup mozzarella cheese - grated
Preheat oven to 350 degrees
Cook noodles according to package directions
In a medium skillet over medium-high heat, saute the onion and garlic
in the olive oil for a couple of minutes. Add the chopped bell pepper
and cook for another couple of minutes. Add the ground beef and cook
until done. Drain fat. Stir in the noodles, pepperoni, pizza sauce and
milk and mix well. Pour this mixture into a greased 2 quart casserole
dish.
Bake for 20 minutes. Top with cheese then bake for an additional 10 minutes.
