We've always enjoyed egg salad sandwiches. They're easy and yummy.
Since I'm always looking for ways to spice up a recipe, I decided to add
bacon to my egg salad. Turns out it's like a little hand held
breakfast. Bacon? Gooood. Egg? Gooooood. Sandwiches? Goooooooood. (Name that TV show!) With a
little kick of red pepper flakes, these sandwiches were the bomb!!
Bacon and Egg Salad Sandwiches
1 dozen eggs ~ medium/hard boiled
1 pound bacon ~ diced and cooked crisp
3/4 cup mayo
1 teaspoon Dijon mustard
1/2 teaspoon red pepper flakes
salt and pepper to taste
Bread
Rough chop the cooked eggs.
Add the cooked bacon, mayo, Dijon, red pepper flakes and salt and pepper to taste.
Spread mixture on toast and serve!!
