I love anything cheesy and warm like this dish. I also love that it's
so changeable. You can use your favorite cheese in this or throw in
something to kick it up a little bit like green chilies or a can of
tomatoes. Serve it right out the skillet to make clean up super fast.
The homemade cheese sauce in this makes this supper WAY better than what
you can find in a box. Really yummy and really good!
Cheeseburger Pasta
1 pound ground beef ~ cooked and drained
1 medium onion ~ diced
1 clove garlic ~ minced
2 1/2 cups grated cheddar cheese ~ divided use
1/2 cup grated parmesan cheese
3 tablespoons flour
3 tablespoons butter
2 cups milk
salt and pepper to taste

- 16 ounces rotini pasta ~ cooked and drained (I used 8-ounces since I
was only feeding 3 people but you can add more to make it go further.)
Preheat oven to 350 degrees.
In a large skillet, saute the onion and garlic about 5 minutes.
Add the ground beef and cook until done.
In a medium saucepan, melt the butter over medium heat.
Add the flour and cook and stir a few minutes.
Add in 2 cups of the cheddar cheese and the parmesan, salt and pepper and stir until smooth.
Pour cheese sauce over cooked pasta and stir.
Add pasta to the meat in the skillet and stir.
Sprinkle with remaining 1/2 cup cheddar cheese.
Place in the oven for about 20 minutes to melt cheese on top and warm through.
NOTE: Add a can of diced tomatoes, a 4-ounce can of diced green chili or whatever you like to stretch this a little further.
