As you know, I have a hefty
size bag of frozen strawberries I need to use up. Since I have my
grandchildren over quite often, I figured I'd whip up some popsicles for
them to finish out the summer. Big hit. Huge. I think they each had 2
the first day. I put in only a half cup of sugar in the whole batch but
if your kids are used to eating things like this with no added sugar,
then don't add it. Or use an alternate sweetener, like honey. Using
frozen berries makes the mixture set up faster, too! Try different
fruits...peach would be awesome...or a mixture of fruits! Really
good...and super easy!
Strawberry Popsicles
20 medium sized strawberries*
1 cup water
1/2 cup sugar
Place all ingredients into a blender and blend until smooth.
Pour into popsicle molds. I used small disposable cups with wooden craft sticks for handles.
Place in the freezer for several hours or overnight.
Makes 8 - 10, depending on the size of your molds.
*I used frozen berries and found that the mixture was thicker before pouring into the cups and the sticks stayed upright in the thicker mixture.
