Pasta salad is a big favorite of mine. I'll eat it in any form or
fashion. This one is really good! Although it's terrific cold, it's
meant to be eaten warm. Serve it right after you add the pasta to the
tomato mixture for something extremely delicious! We have this as a side
dish with dinner and then there's always enough for my lunch the next
day. I've even been known to nuke it for a few seconds to knock the
chill off. :-)
Warm Cherry Tomato Pasta Salad
1 container cherry tomatoes ~ cut in half
1/2 cup olive oil
1/4 cup fresh basil leaves ~ sliced
1 tablespoon salt
1 4-ounce can sliced black olives
1 pound pasta
3/4 cup fresh grated Parmesan cheese
In a large bowl, combine sliced tomatoes, basil, salt and olive oil.
Stir to combine, cover and allow to sit at room temperature for a couple of hours so the mixture becomes juicy.
Cook the pasta. Drain.
In a large bowl, combine the pasta, olives and the tomato mixture.
Sprinkle with grated parm.
Serve warm.
