How fun was this meal? And easy? This is one of those "fix it and
forget" types of things. Throw everything in foil packets, toss it in
the oven and an hour or so later, you've got dinner! That's it! The
chicken is tender and juicy and the veggies are perfect! Really, really
yummy!!!
*This recipe is enough for 4 foil packets but this can certainly be adjusted to feed just one or two...or more!*
Campfire Chicken
8 chicken thighs ~ bone in, skins on
1 pound baby Yukon gold potatoes
1 1-pound package baby carrots
1/2 large onion ~ sliced
Spice Rub ~ recipe follows (enough for 8 chicken thighs)
Preheat oven to 375 degrees.
Lay out a piece of foil. (It's best to use the heavy-duty kind but you can use two sheets of regular, too) Spray with cooking spray.
Place two pieces of chicken on the foil then sprinkle with 2 teaspoons of the rub.
Arrange 4 baby potatoes, a handful of carrots and some of the sliced onion on the foil with the chicken.
Close foil around the chicken and veggies and place packets on a large baking sheet.
Bake for 1 hour.
Allow to rest for 5 minutes before opening packets.
Transfer to a plate, if desired.
Spice Rub
2 teaspoons salt
1 1/2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon rosemary
1/2 teaspoon garlic powder
1 teaspoon black pepper
Mix everything in a small bowl and sprinkle over chicken. Enough for 8 pieces of chicken.
