Welcome!

Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. But...mostly this will be a place for food. I hope you'll see something you like and if you decide to try something from the list...leave me a comment and let me know!

Cheeseburger Casserole

Sometimes you just can't beat a good cheeseburger. Or a good casserole. Or both together! I made this the other day and when I served it to IT Guy, I didn't tell him what it was. He took a bite and I asked him what it tasted like and he said...without hesitation: A cheeseburger. Right out of the gate! Yay me!! This is a great weeknight meal, easily doubled for a larger family and pretty quick to throw together. Add a salad for a side and you got yourself a par-tay!!

Cheeseburger Casserole

1 can crescent rolls
1 pound ground beef
1/2 cup finely chopped onion
1/3 cup chopped dill pickle slices
2 tablespoons ketchup
1 teaspoon prepared mustard
2 tablespoons flour
2 tablespoons water
2 tablespoons milk
2 cups cheese ~ divided use

Preheat oven to 375 degrees

Unroll crescent rolls and press into the bottom and up the sides of a greased 8x8 inch pan.

In a skillet, cook onion in a little olive oil for about 5 minutes.

Add ground beef and cook until done.

Stir in chopped pickle, ketchup and mustard.

Sprinkle with flour then add water and milk. Cook and stir until thickened and bubbly.

Remove from heat and add 1 cup of shredded cheese.

Pour into the prepared crust and bake for 15 minutes, or until edges of crust are golden brown.

Top with remaining cup of cheese. Cook for 5 more minutes until cheese is melted.
