Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Americana Frittata

A lot of times on Friday nights, IT Guy and I will go out to eat, but last night I just wanted to stay home. Do you ever have those times when nothing really sounds good so you rustle up something in the kitchen? Well..that's what I did last night. With no plan to share on SFFS, I started scrounging around in my fridge for ingredients. I came up with very simple things and made the following recipe. IT Guy asked me midway through if I was going to share this and I told him I figured everyone knew how to do this. And I'm sure the majority of you DO....but on the off-chance that there a few out there who don't, here's my very basic and yummy frittata...with no pictures except the finished product.

Americana Frittata



3 eggs
½ pound bacon - diced
1 green bell pepper – diced
4 green onions – chopped
1 cup shredded cheese – any kind (I used sharp cheddar and jack)
¼ cup half & half
Salt and pepper

Heat oven to 350 degrees.

In a 10 inch non-stick skillet, cook diced bacon until crisp. Remove to drain on paper towels, reserving 3 tablespoons bacon fat.

Add green onion and bell pepper to skillet and sauté until tender-crisp.

In a medium bowl, whisk eggs and half & half together. Add salt and pepper to taste. Gently pour egg mixture over bell peppers and onions. Allow to cook on stove top for about 2 minutes. Sprinkle cheese over egg mixture then sprinkle with bacon.

Place skillet in preheated oven for about 5 minutes to cook the top. Allow to cool for a few minutes then cut “pizza style” and serve.

Serves 2 - 3
