A lot of times on Friday
nights, IT Guy and I will go out to eat, but last night I just wanted to
stay home. Do you ever have those times when nothing really sounds good
so you rustle up something in the kitchen? Well..that's what I did last
night. With no plan to share on SFFS, I started scrounging around in my
fridge for ingredients. I came up with very simple things and made the
following recipe. IT Guy asked me midway through if I was going to share
this and I told him I figured everyone knew how to do this. And I'm
sure the majority of you DO....but on the off-chance that there a few
out there who don't, here's my very basic and yummy frittata...with no
pictures except the finished product.
Americana Frittata
3 eggs
½ pound bacon - diced
1 green bell pepper – diced
4 green onions – chopped
1 cup shredded cheese – any kind (I used sharp cheddar and jack)
¼ cup half & half
Salt and pepper
Heat oven to 350 degrees.
In a 10 inch non-stick skillet, cook diced bacon until crisp. Remove to drain on paper towels, reserving 3 tablespoons bacon fat.
Add green onion and bell pepper to skillet and sauté until tender-crisp.
In a medium bowl, whisk eggs and half & half together. Add salt and pepper to taste. Gently pour egg mixture over bell peppers and onions. Allow to cook on stove top for about 2 minutes. Sprinkle cheese over egg mixture then sprinkle with bacon.
Place skillet in preheated oven for about 5 minutes to cook the top. Allow to cool for a few minutes then cut “pizza style” and serve.
