Loved, loved, LOVED this! We had company over the other night and
amongst all the dessert goodies, this little item was served. I can't
tell you how yummy it is. If you enjoy apple pie, then you've GOT to try
this. IT Guy was in heaven since apple pie of his favorite things in
the world. Definitely will be doing this again!!
Apple Pie Dip
with Cinnamon Sugar Crisps
5 – 6 apples ~ diced
1/3 cup sugar
1/3 cup brown sugar
½ teaspoon cinnamon
¼ teaspoon nutmeg
1 tablespoon lemon juice
3 tablespoons cornstarch
2 tablespoons water
1 teaspoon vanilla extract
1 dozen small flour tortillas
Oil for frying
Cinnamon/sugar for sprinkling the tortilla chips
In a large saucepan, combine the sugar, brown sugar, cinnamon, nutmeg, and lemon juice.
Add the apples.
Heat over medium heat until boiling.
Stir together the cornstarch and water and pour into the apple mixture. Cook and stir until boiling and thick.
Remove from heat. Add vanilla and stir.
Set aside to cool and thicken.
In a skillet, heat two cups of oil over medium heat.
Cut tortillas into wedges.
Fry tortillas until lightly browned and crispy. Drain on paper towels.
Sprinkle with cinnamon/sugar.
Serve with Apple Pie Dip
