Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Strawberry Bread



I love a yummy sweet bread. So when I saw some fresh strawberries in the store the other day, I couldn't pass them up. I knew what I wanted to do with them. Breads like this freeze well so if you need to double the recipe, it's easy to do then you can throw the extra loaf in the freezer to pull out for later. Or give a loaf away to someone who might need cheering up! Strawberries brighten anyone's day!

Strawberry Bread



1/3 cup butter
1/2 cup plus 2 tablespoons sugar
2 eggs
1 1/3 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe strawberries
1 cup diced strawberries

Preheat oven to 350 degrees. Grease and flour a loaf pan.

Cream butter and sugar until fluffy.

Add eggs and beat well.

Sift together dry ingredients and add to butter mixture alternately with mashed strawberries, blending well after each addition.

Stir in diced strawberries.

Pour into prepared loaf pan.

Bake for 45 – 50 minutes at 350 degrees until done.

Let cool on wire rack for 10 minutes then remove from pan and cool completely.


The line up....


Dice one cup of berries...and mash another cup.


Combine the sugar and butter then 
add the eggs. Then the mashed berries.


Sift the dry ingredients together.


Then add it to the strawberry mixture.


Stir in the diced berries.


Pour the batter into a well greased loaf pan.


Bake!


Allow it to cool then turn the bread out of the pan.


Let it cool then slice and eat!
