These aren't anything new to anyone I think but I always enjoy a
good potato dish. What I liked about these is the fact that there is a
little cream cheese in the mixture to help hold it together...besides
being absolutely delicious, obvs. I'm telling ya'.....ya' gotta try
these. Just terrific!!
Double Baked Potatoes
3 - 4 baking potatoes ~ baked
1 cup shredded cheese ~ divided use
1 pound bacon ~ diced and cooked crisp
3 green onions, chopped
1/2 stick butter
4 ounces cream cheese
Salt & pepper to taste
Preheat oven to 350 degrees.
Slice baked potatoes in half lengthwise. Holding hot potato in a towel or a hot pad, scoop out the insides into a mixing bowl, leaving a thin layer of the potato in the jacket. Repeat with all potatoes. Place empty potato jackets in a baking dish.
In the mixing bowl with the potato "innards", add the salt, pepper, butter, half the shredded cheese and cream cheese. Mix until well blended, adding some milk, as needed. Then add half the cooked bacon and half the chopped onion.
After mixture has come together, fill each potato jacket the potato mixture. Sprinkle filled potatoes with remaining cheese, bacon and onions.
Cover with foil and bake for 20 - 30 minutes until hot.
