One thing I know that makes my family happy is anything sweet.
Knowing how much they love cinnamon rolls and cupcakes, I decided to
combine the two for something fantastic. Wow...but these were good. I
sent about a half a dozen to work with IT Guy and #1 son was none too
happy about it. That meant less for him. It also meant less for me,
which is a GOOD thing as far as I'm concerned. These little guys are out
of this world!!!
Cinnamon Roll Cupcakes
1 box yellow cake mix
2 teaspoons cinnamon ~ divided use
1/2 cup brown sugar
1 8-ounce cream cheese
1 stick butter
1 teaspoon vanilla
milk
2 1/2 cups powdered sugar
Mix cake mix according to box directions for cupcakes with 1 teaspoon of cinnamon added to the batter.
Place cupcake liners in cupcake pan and fill liners a little less than half full with batter.
Mix 1/2 cup brown sugar and 1 teaspoon cinnamon together in a small bowl.
Sprinkle a heaping teaspoon of cinnamon mixture over cupcake batter.
Place a little more batter on top of brown sugar mixture.
Bake as normal.
For frosting:
In
a mixer, beat cream cheese and butter together until smooth. Add
vanilla and powdered sugar. Add a little milk to make frosting
spreadable.
Pipe or spread frosting over cooled cupcakes and sprinkle with extra cinnamon.
Frost your cooled cupcakes then eat 'em up!!
