Welcome!

Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. But...mostly this will be a place for food. I hope you'll see something you like and if you decide to try something from the list...leave me a comment and let me know!

This casserole turned out to be a winner all the way around! My mom had given me some spicy Italian sausage so of course, I had to make a little sumpin-sumpin Italian with it. I had just made pizza last week so I knew it would NOT be that. I had Bisquick on my brain so I knew I would use that and then decided to throw a few garlic cheddar biscuits on TOP of casserole. How fun! The biscuits soaked up a little bit of the liquid from the casserole and and gave it some good texture. Overall this was a BIG hit! IT Guy proclaimed it a keeper!!!

Spicy Sausage Casserole with Garlic Cheese Biscuits

1 pound ground beef
1 pound spicy Italian sausage
1 onion – diced
1 green bell pepper- chopped
2 cloves garlic – minced
1 15-ounce can fire roasted tomatoes
2 8-ounce cans tomato sauce

Heat oven to 350 degrees. Grease a 9x13 casserole dish.

In a large skillet, sauté onion and garlic for a few minutes. Add bell pepper and cook for a few minutes longer.

Add ground beef and sausage and cook until meat is no longer pink.

Pour fire roasted tomatoes and tomato sauce into pan with meat mixture and stir well. Heat for about 5 minutes then pour into prepared casserole dish.

This is what you need...

Saute the onion and bell pepper for a bit.

Then throw in the meat. If you're using the links like I did,
make sure and remove the casings. Just split the sausage
down one side and peel the casing off.

Brown the meat. Add the oregano, salt and pepper.

Then add the fire roasted tomatoes and the tomato sauces.

Give it stir then pour the mixture
into your prepared casserole dish.

Garlic Cheese Biscuits

2 ¼ cups Bisquick
2/3 cup milk
1 cup cheese
¼ cup melted butter
1 ½ teaspoons garlic powder

Combine Bisquick, milk and cheese in a medium sized mixing bowl. Drop biscuit mixture onto the top of the casserole.

Melt butter in a small bowl then stir in the garlic powder.

Brush half of the garlic butter on top of the biscuits. Bake casserole for 10 minutes. Remove casserole from the oven and brush biscuits with remaining garlic butter. Return to the oven for another 15 – 20 minutes or until biscuits are browned and casserole is bubbly.

Now for the biscuits. So easy.

Throw the Bisquick, milk and cheese into a bowl
and stir it around. Make sure the cheese is distributed nicely.

Combine the melted butter and the garlic powder.

Plop the biscuit dough on top of the casserole then
brush the biscuits with HALF of the garlic butter.

Bake it for ten minutes or so until the biscuits have puffed up. Brush the biscuits with the remaining garlic butter.

Finish baking until the biscuits are golden brown
and done underneath. SO YUM!!
