Back in the 70's, our family moved to Arizona. We had lived in
California previously but my mom had never experimented with Mexican
food before. But after moving to the southwest, where everyone and their
uncle ate Mexican food, she started branching out. She started with
easy things like tacos and Mexican casseroles...those types of things.
Although it was good and our little family of four really enjoyed it, I
don't know that I would call it REAL Mexican food. One day, she came
across this recipe. Or maybe she made it up, I'm not sure which. And the
reason I don't know is because of the name. When she made it and served
it, we asked her what it was called, and she said she didn't know. We
told her it had to have a name because it was so good. She still
couldn't come up with anything. We kept badgering her until she finally
started calling it "Mexican Delight". Great. No problem. Until she
created another recipe and put the "delight" in the title as well. The
closest I can determine is that she had such good success with "Mexican
Delight" she figured she'd just keep on using it. So now....40 years
later...we still tease her about her "delight"-ful recipes! Don't you
just love a good mom story?
Mexican Delight
1 pound ground beef
1 medium onion - diced
2 15 - ounce cans pinto beans or chili beans
1 15-ounce can tomato sauce
1 7-ounce jar salsa
1 10-ounce can enchilada sauce
1 teaspoon garlic salt
salt and pepper to taste
In a skillet, brown ground beef with onion until done. Add the rest of the ingredients and heat through.
Pour into a crock pot and cook on low for 5 - 6 hours until hot.
Serve over Fritos or corn chips (Fritos are BEST). Then layer lettuce, tomatoes, cheese, olives, sour cream, salsa, etc!
Here's what you need for
this "delight"ful dish.
Brown the meat and onions together.
Then add everything else. Put it
all in your crock pot and cook it
for a while until hot!
Yum!!!! Serve over Fritos
and add your toppings!
(Do
you see how the sour
cream is not touching anything
else? That's
because IT Guy has
a weird aversion to this yummy
substance. Silly man.)
