Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Polynesian Meatballs

When my granddaughter turned 2, we had a Hawaiian themed birthday party for her. Everyone came in their grass skirts....even IT Guy! Haha...not really....but he did wear his Hawaiian shirt. We had the back deck and yard looking like paradise! So, of course with the guests in their island attire and the venue tricked out with all things tropical, the food had to match the surroundings! Fresh pineapple was on hand, naturally...along with various other items. But the dish that shined...shone?...that was a BIG hit...were these Polynesian Meatballs. I think one of my nephews just parked himself at the buffet table and grazed on these. They are so good....and so easy to prepare.

Polynesian Meatballs



2 pounds ground beef
1 egg
1/3 cup finely diced onion
2/3 cup cracker crumbs
1 ½ teaspoons salt
¼ teaspoon ground ginger
1/3 cup milk
2 8-ounce cans pineapple tidbits
1/3 cup chopped green pepper
½ cup brown sugar
1/3 cup vinegar
1 tablespoon soy sauce
2 tablespoon cornstarch
Olive oil
2 tablespoons butter

Drain pineapple and reserve the juice. Set aside.

In a large bowl, combine the meat, cracker crumbs, onion, egg, salt, ginger and milk. Mix well. Shape into balls.

In a large skillet set over medium heat, add a little olive and 2 tablespoons of butter. Add meatballs and allow to cook on all sides, about 15 minutes or so. Remove from pan onto a plate.

Mix pineapple juice, vinegar and soy sauce with the cornstarch and pour into the skillet. Stir until hot and bubbly then add the green peppers and pineapple. Gently add the meatballs and stir to coat. Serve over rice.



Here's the meatball stuff.

Combine the meat, bread crumbs, 
egg, milk, onion, salt and ginger.

Form into balls and cook in
 a little bit of olive oil and butter.

Here's the sauce stuff.


Combine the pineapple juice, 
vinegar, soy sauce and cornstarch. 
Pour it into the skillet that you cooked the meatballs.

Let it cook until nice and thick.

Then dump in your 
pineapple and green peppers.

Heat that up....

...then add your meatballs. Serve over rice!!!
