I think there's almost nothing as delicious as a muffin. I love 'em! There's just something fun and funky about a little mound of dough...baked up with all kinds of goodies inside. The possibilities are endless. They can be eaten anytime or anywhere. With a cup of coffee at your breakfast table or on the run in your car. Sweet or savory, muffins are just plain yummy! And this little blackberry gem is just the ticket! I made these last week and they lasted no time! Not too sweet but sweet enough to satisfy. I think they would be fabulous with some kind of crumbly topping sprinkled over them. But, they are delicious as is!!
Blackberry Muffins
½ cup shortening
1 ¼ cups sugar
2 eggs
2 cups flour
2 teaspoons baking powder
½ teaspoon salt
½ cup milk
2 cups blackberries – frozen (the berries hold up better in the dough if they're frozen)
Sugar for sprinkling
Line muffin cups with cupcake liners. Spray cups lightly with cooking spray.
Cream shortening and sugar together until creamy. Add eggs, one at a time until combined.
Stir together the flour, baking powder and salt. Add to the sugar mixture alternately with milk, beginning and ending with dry ingredients.
Stir in frozen blackberries.
Spoon mixture into prepared muffin tins and sprinkle with a bit of sugar. Bake for 25 – 30 minutes or until lightly golden brown and done in the center.
Makes about 18 muffins.
