I ran across some beautiful
strawberries in the store the other day. I only picked up one container
and then after I got home I could have kicked myself for not buying at
least one more. They were SO good. I decided to make this yummy pie
instead of the typical strawberry shortcake. It was a HUGE success and
didn't last long at all! I can't wait to make it again!!
Strawberry Cream Pie
1 recipe of your favorite pie dough. Make pie dough and place in a 9 inch pie pan. Bake pie dough for 15 - 20 minutes on 350 or until lightly browned. Remove from oven and set aside.
Glaze:
2 cups (1 pint) ripe strawberries, washed and hulled
3/4 cup sugar
1/4 cup cold water
1 dash salt
1 1/2 tablespoons cornstarch
1 teaspoon unsalted butter
Directions for glaze:
Pick over the berries and choose a cupful of the prettiest ones. Slice in half and set aside.
Crush the remaining berries and place in a saucepan with sugar, water, salt and cornstarch. Bring to a boil. Reduce heat and simmer for 2 minutes, stirring constantly. Stir in the butter. Cool slightly. Set aside.

2 cups whole milk
3 slightly beaten egg yolks
2 tablespoons butter
1 teaspoon vanilla

In a medium saucepan, combine sugar, flour, and salt; gradually stir in milk. Cook and stir over medium heat until the mixture thickens and boils. Cook for two minutes. Remove from heat.
Stir a small amount of mixture into the egg yolks to temper them then pour egg mixture back into the saucepan. Cook for two minutes, stirring constantly. Remove from heat. Add butter and vanilla then pour into baked pie crust.
Arrange the uncooked berries on top of the pie. Spoon the glaze over all. Chill for several hours.
