I was in the mood for something spicy but not hot. Satisfying but not gut-busting. Boy, did I hit the nail on the head. This turned out so good...we all loved it! The nice thing is, is that the sauce can go on just about anything. And how yummy would the meatballs be in a sandwich with the sauce? Add a little smoky cheddar and it's a winner, for sure! You've GOT to try this. If you enjoy walking on the spicy side of things, you'll love this!!
Honey Chipotle Barbecue Meatballs
2 pounds ground beef
1 small onion, finely chopped
½ cup water
1 egg
½ cup breadcrumbs
1 ½ teaspoons salt
In a small bowl, add the bread crumbs to the water. Stir to mix well and set aside. Combine the ground beef, onion and egg. Mix in the wet bread crumbs and salt. Shape meatballs about the size of golf balls.
Heat a large skillet on medium high. Pour in a little olive oil. Add meatballs and brown on all sides. Cover and allow to simmer for about 15 - 20 minutes or until done. Remove to a large bowl.
Makes about 30 - 40 meatballs
Honey Chipotle Barbecue Sauce
1 cup ketchup
1/2 cup brown sugar
1/2 cup honey
3 tbsp chipotle peppers in adobo sauce
4 tsp apple cider vinegar
3 tsp Worcestershire sauce
1 tsp garlic powder
1/2 tsp salt, or to taste
pinch ground pepper, to taste
Combine all ingredients in a food processor and blend until very smooth, 1-2 minutes. If a thinner consistency is desired, add a tablespoon or two of water to thin the mixture.
Makes about 2 cups of sauce
In a small saucepan...or in a microwaveable bowl, heat sauce until warm and pour over meatballs. Stir gently to coat all the meatballs.
Serve over rice.
