These little pocket sandwiches are pretty tasty. I made them for an informal gathering the other night and they went over great! I had a half of a half and when I went back for the rest of it, they were ALL gone! I love when that happens!! Not sure IT Guy does, though. That means no leftovers. But..they are so easy to make that I can whip up another batch for him!
2 cups cooked chopped chicken
1 small onion
1 clove garlic
½ cup chopped roasted red pepper
1 tablespoon honey mustard
1 teaspoon salt
½ teaspoon lemon pepper
2 cups grated cheese - cheddar, jack, cream cheese, etc.
16 – 18 frozen bread dough balls – thawed
1 egg - beaten
Saute onion and garlic in some olive oil until tender. Add roasted red bell peppers and cook that for a bit. Add honey mustard, salt and lemon pepper and stir. Add chicken and heat through. Remove from heat and add grated cheese. Stir until cheese is melted.
Working with one dough ball at a time, on a floured surface roll each ball into a 5 inch circle. Place on a parchment paper lined cookie sheet. Place a ½ cup of chicken mixture on flattened dough and cover with another flattened dough ball. Make sure all filling is tucked inside, and then crimp edges or press edges together with a fork. Repeat until all chicken mixture is used. Brush tops with beaten egg.
Let roundabouts rise for about 30 minutes then bake at 350 for 20 minutes or until golden brown.
Cut in half and serve.
