Welcome!

Welcome to Simple Fare, Fairly Simple. This is a place for me to post recipes of all kinds...along with other miscellaneous fodder from my so-called life here in the south. Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. But...mostly this will be a place for food. I hope you'll see something you like and if you decide to try something from the list...leave me a comment and let me know!

Pepperoni Pizza Pinwheels

I decided a fun snack for us one Sunday night would be these! Made with the same pizza dough recipe on here (# 46), I thought I'd give these are try. They turned out so fun! I think kids would really like these. My family...being the good guinea pigs that they are...really enjoyed them. You could use refrigerated pizza dough..or your own favorite recipe...or buy pizza dough balls...and it would be fine. But....the recipe I use for pizza is VERY good and makes these pinwheels perfectly!

Pepperoni Pizza Pinwheels

2 tablespoons Olive Oil
¾ cup plus 2 tablespoons milk – warmed to 110 degrees
2 teaspoons sugar
2 1/3 cups all purpose flour
1 package instant yeast
½ teaspoon salt
1 4-ounce bag mini pepperoni
1 cups pizza sauce
1 – 2 cups grated cheese – mozzarella, cheddar, etc.

Heat oven to 200 degrees. Once oven reaches 200 degrees, turn it off.

Lightly grease a large bowl with cooking spray.

Mix warm milk, sugar, and Olive Oil in a measuring cup. Mix flour, yeast, and salt in a standing mixer fitted with a dough hook. Turn machine to low and slowly add milk mixture to flour mixture. After dough comes together, increase speed to medium-low and mix until dough is shiny and smooth, about 5 minutes. After 5 minutes, turn dough onto a lightly floured surface, gently shape into a ball and place in greased bowl. Cover with plastic wrap and let rise in the warm oven for about 30 minutes.

Transfer dough to lightly floured surface. Roll dough out with a rolling pin to about 13x20 inches. Spread pizza sauce over dough leaving about 1 inch on one long side free of sauce. Sprinkle with pepperoni and cheeses. Roll up – starting at one long side. Cut into 18 – 20 rolls and place in greased pan.  Cover with plastic wrap and let rise in a warm place for about 20 minutes.

Preheat oven to 400 degrees. Bake pinwheels for about 20 – 25 minutes or until lightly browned and done. Let cool for 5 minutes then slice and serve with extra pizza sauce.

This is for the pizza dough.

Combine the milk, sugar and olive oil in a measuring cup. Then...

...mix the dry ingredients together. Then...

..pour the milk mixture into the dry stuff.

Mix it well...knead it for about 5 minutes.

Then plop the dough into a greased bowl, cover and let it rise!

Double the size!

Then roll it out...like you're making cinnamon rolls.

This is the topping stuff.

Spread the sauce and the pepperoni. I used the mini ones but you can use the big one, if you want. Might want to at least cut them in half, though.

Roll up the dough...like this. Leave one long side free of sauce or it will squeeze out as you roll it up.

Slice them into pinwheels.

Put them in your baking pan...

..let them rise one more time then bake 'em!! So fun!
