Who knows what you will find here. Could be anything from my husband...known as IT Guy...to my kids and beautiful grandbabies that are growing up way too fast right before my eyes. Savory Breakfast Casserole

It's time for breakfast!! But...if you're like me...you don't hop out of bed in the mornings all chipper and cheery and ready to cook. That's not what I do. Nope. IT Guy would LOVE that...but scrambling eggs and cooking raw meat at the crack of dawn makes me want to curl up in a ball on the kitchen floor. And because my kitchen floor isn't always immaculate (just keepin' it real here, folks) I take care of the situation by not cooking breakfast in the mornings. So when do I cook breakfast, you might ask? Well...I cook it for dinner! And this breakfast casserole ranks right up there at the top of my list of "things to make for breakfast but we call it dinner". It's delicious!



Savory Breakfast Casserole


20-ounce package hash browns
1 tablespoon oil
10 eggs
¾ cup half&half
1 teaspoon salt
½ teaspoon cracked black pepper
1 teaspoon baking powder
1/2 cup diced onion
12-ounces cooked sausage links or sausage patties, quartered
1 ½ cups grated cheddar cheese

Preheat oven to 375 degrees

In a large bowl, mix hash browns with the oil. Stir to mix and pour into a greased 9x13 inch baking dish. Bake for 20 – 25 minutes. Remove from oven and set aside.

In a large mixing bowl, combine eggs, half&half, salt and pepper and baking powder. Mix until well combined. Stir in diced onions and slowly pour over baked hash browns. Arrange sausage on top and bake for 30 minutes until set. Remove from oven and sprinkle with grated cheese and return to oven for another 3 – 5 minutes until cheese is melted.

Let stand for 5 – 10 minutes….serve!


Here's the goods!
Stir the oil and hashbrowns together.
I used the small cubed kind of hashbrown but the shredded kind would work, too! 
Anyway...bake it up!
Then combine the eggs, half&half, salt, pepper and baking powder.
Then pour that over the cooked hashbrowns.
Put the sausage on top. Now you can use links or patties here. My pictures shows 
links, but I ended up using some patties that were already cooked. 
Cook it for about 30 minutes...then....
..sprinkle with cheese and heat it for a few more minutes. Yum!
